    Hi Tessie, today, my mom would have turned 101! I really miss her. I grew up hearing, "waste not, want not!" She went through WWII, and so much in her lifetime. She saved butter containers, bread wrappers, plastic bags, paper bags, and reused those wax milk cartons! We had tons of glass jars too. There was very little food waste. Mom was as frugal as they came. Even clothing was re-purposed. I really enjoyed your honest opinion on the preserved lemons. Not everything we read or hear works. It's good that you shared the experience with us! I also liked seeing everything you worked on today.

      My mom went thru the depression days too. She would have been 98 today. I remember her saying the same thing.... so I do the same even tho my kids haven't caught on to that way of thinking. 😊

    You could always use your lemons to make your cleaning solutions-that would help use them up, and soaking them would probably dilute the saltiness. My Grandma was a child of the depression, born in 1907. She was of the waste not mindset too. In fact, when cleaning out her home after she passed, I found an entire box of used tinfoil, plastic bags, bread wrappers, and waxed paper!

    since there isnt much on sundays i put in gone with the wind never seen it and it kinda touches on an era lost to history how the south went through bad times long before the depression

    You can put the salty lemon in water as an electrolyte solution. I make a solé for daily use and add a little lemon… great for hydration! 🍋 🧂 💧

    Look for uses from back in the 1800a. Pickled lemons were a thing especially in England for the upper class.

    I dehydrate my lemons and seal them up in mason jars. This works for me, and I think they look very pretty in jars.

    I wouldn't tincture the lemons stored in salt brine. I'd use them for cooking like you said. To preserve lemons for lemonade, tea, etc. dehydrate them. Works great! I put them in a pitcher of water with sugar in the fridge overnight and by the next day we have lemonade.

    So good to see another old soul preserving the garden like our great grandmothers did. These days I sometimes feel as if I'm being described as odd for doing this, but looking at it historically people have been growing and preserving food for as long as there have been people. What is recent and actually odd is relying so completely on the grocery store or door dash services. I envy your potato harvest, ours was pitiful (though we haven't harvested sweet potatoes just yet). Last week I was turning the pile of tomatoes on the table and the freezer into jars of red enchilada sauce and marinara pasta sauce for this winter. I did find a very good price on some store bought Yukon Golds and Red potatoes at the store so I stocked up on those and next will be working on canning them as well.

    Wash lemons and dry them. Store them in a tightly closed plastic bag in the refrigerator and they last for a long time.

    I remember people use to make and can lemon syrup for lemon aid. I think the jarred lemon juice came from this originally.

    I love this kind of content Tessie, brings back fond memories of my grandparents who went through the depression too. I remember as a little girl staying at their home most weekends and helping out with this sort of stuff. I sure miss them alot.

    With family close by, you need to figure out how to trade food stuffs etc...for fill-in groceries and extra help around the homestead. Especially when you end up with an abundance from the garden or the monthly food good away.

    Tessie, we all already knew that you're brave and honest, but you really demonstrated that in this video! You were brave enough to try something new that you'd never done before -- "pickling" lemons. And honest enough to tell us what you really thought about the way they tasted -- ("Terrible!!") And then you went right into "Tessie's Out-of-the-Box Mode" -- trying to figure out what they could be used for -- besides lemonade. I love that!
    I'm with you on wanting to enjoy the flavor of a real homegrown tomato over a "perfect" one from the store. They may not look as pretty, but as anyone who has ever grown their own can tell you the flavor of a tomato straight from the garden simply cannot be topped!
    Any housewife who made it through the Great Depression would have been proud and thrilled to have preserved what you did in this video. My grandmother was widowed during the Depression, and she had 4 children. (Plus, she coped with a hearing impairment!) We heard stories of how she would leave a dime on the kitchen table when she went to work in the morning -- with instructions to the kids (who were ages 4 to 14) to use that 10 cents to buy a can of beans at the store. That was to be their lunch! Hard to imagine.
    We may feel financial pressure these days, but I do believe that they had even more to cope with back then! I think it's good to do what you do, and think about all the "what if..?" situations they had to overcome! A lot!

      I don't think I would have done too well with the conditions back during the Depression either! (Especially those slop jars!) And the medical care? Yikes! Especially before there were antibiotics. You had prayer and TLC and relied on Providence. Amazingly, though, my grandmother lived to be 87 years old! 🙂 Blessings to you, dear friend!

    Found this on another website:
    Pop them whole into stews; add thin-sliced slivers into drinks; or mince them up for earthier pasta sauces. Before use, rinse to tame the saltiness and be sure to discard the seeds; because of the fermentation process, the rind and pith are fine to consume and will taste the same as the flesh.

    I knuckled down and tested myself, I ate just what my garden gave me and my dehydrated veggies, I used my pasta and rice, canned beans just to see if things got really bad could I survive? Well yes I will survive but I have lost 35lbs so yeah I will be skinny but alive it showed me that I better increase my garden! And find more ways to prepare my hardy summer crop here in Texas as my egg plant withstood this heat so did okra, Swiss chard, cucumbers, jalapeño, Hungarian sweet peppers and banana peppers but tomatos and bell peppers just can’t handle this day after day of 116-119f heat , my sweet potatos are still growing so praying come October I got a decent harvest. I am glad I did this test it gave me insight to what I must do next February, I will be planting my fall crops Labor Day weekend.

    I remember going shopping with my mom and her asking for flour etc in LBs and ounces. No brand names. Then we got the magical stores from America! Self service! People in Ireland were resistant but progress marches through everywhere. The community shop where everyone spoke and knew everyone else’s families was gone forever.
    I so wish I could be as great as Tessie. I always want to do canning but life seems to take over.

    My Grandmother, would take the flour sacks and make dresses for my mom born 1939, and her older sisters, they made butter and my mother, would grate carrots, and take any juice from them and added it to the butter, my grandmother was taught from her mother, to can 4 Generation I'm teaching my daughter 23, I'm 53 almost 54 so 5 Generations of women canning.😊💖

    Good morning, Tessie. You're so great at explaining and modeling how to use what we have to its fullest and finished so many different projects in this! Seeing you make the pickles has me in the mood to make some relish or pickles, too. I was wondering about those lemons; kudos to you for taste-testing them! 🍋My grandmother (Nana) was born in 1929, just in time for the Great Depression, she always says. Even though she was a child for a good portion of it, she loves to tell stories about how she remembers her mother sewing, cooking/baking, canning, and preserving. She often says, "We never had any money, but I never knew how poor we really were. My mother used everything up and always made it seem special."

    When we preserve lemons we do them Moroccan style where you make an X mark and stuff with salt and then pack in a jar, Kous Kous Moroccan Bistro has a good video on how to do that. We cook using a tagine a lot.
    I also use Rockin Robin Cooks video Too Many Lemons? Preserve Lemons 4 Ways! from 2 years ago. Where I slice and freeze fresh lemons and store in a silicon freezer bag. And zest lemons and freeze the zest in small silicon freezer bags.

    When faced with anything that's too salty, spicy, sour or sweet etc... a red/white potato is your best friend. You can take an appropriate sized peeled potato and drop it into a container or bowl with the salty/other item (lemons in this case) with some water and it'll pull out the extra salt. Just be sure to check the lemons/items about every 30 minutes until the salt content is at the right level for you. If left soaking too long, it'll take away all the salt and tang too. I did this 1 time long ago with with a large pot too spicy and hot crawfish/corn/potatoes that a cajun neighbor went overboard with the heat and my young daughter along with the rest of us could hardly eat. I just dropped 1 large peeled potato into the pot while hot on the stove and checked every 30-45 minutes until it was at a mild heat level, scooped out the raw potato then we were all able to sit down and enjoy our large meal without burning our lips off LOL. Hope this may help anyone that reads my comment. Save that raw potato and add it into another dish...no waste not want not. Take care Tessie

    We usually just use plain water for our lemons in the refrigerator... normally last a couple a months.

    Tessie, the preserved lemons are great in chicken dishes with a sauce , My hubs an I went to the I think Black horse Inn, in Reamstown,Pa when we lived there, It was amazing, I fell in love preserved lemons...try recipes using them ,it's so good..
    Do you save your tomatoe skins and dehydrate and kerp vacuum seal in jars and grind as needed for some tomato paste or adding powdered to soups stew etc..Im really loving using every thing to its fullest extent! Also drying tomatoes that have been pureed ,and crushing, or flaking it and keep in jars since tomato powder turns to a brick, if not vacuum sealed each time the jar is opened.
    I love what your doing on your channel now..we are all going to need the skills, thank you for what your doing!
    Because of you I got a wringer and 2 utility sinks and the soap holder you showed a long time ago!!

    Nothing is better than home grown veggies. With tomatoes you can even smell the wonderful smell like no other. I have given up on trying to grow bell peppers. Over the last few years they are so small they are not worth it. Everything looks so good and delicious from your garden. I have heard that saying all my life, Waste not want not. It really is true tho! I had to laugh when you tried the lemon!! You were brave and I will say you are very truthful. Use them in cleaning solutions.

    I preserve my lemon in vinegar. It stays for years if u don't use it.

    Love the fridge liners. I got some and they are great!.
    My husband love pickled lemons. They are soooo salty. He eats them like pickles (cucumber or vegetable). With sandwiches. I don’t care for them either 😂

    Where can you buy sausage bacon ? Does it have a brand name ? Can you show us the packaging sometime ! Would love to try it if I can find it ! Never heard of it before until you showed it on your video .
