    i must be one of your original sub's tessie. i came here when prepper princess directed me to you, here. so blessed. please, please, please, do a series on your get-out-of-debt frugal meals. we need them. i am in canada. it is terrible here. i am on a fixed income, decent, as i worked for the post office for 30 years, but even with that, it is getting more and more difficult for me, and for us all. you give me/us hope, as i sit here in tears, for better outcomes for all of us. ty.

    I don’t even par boil the lasagna noodles if they’re the “not oven ready” type, I just pour a little water into each corner of the pan or baking dish before putting it in the oven to bake. The noodles absorb the water while baking and they’re just fine. I will take every short cut I can find😁

    I bought cottage cheese and I have hamburger and mozzarella and parmesan cheese in the freezer. I found lasagna noodles in my long term storage so I plan to make lasagna next weekend when my friend comes. Its one of her favorites.

    As long as you cover the “regular “ lasagna noodles with sauce, you can use them without cooking first! I learned this hack years ago and it works great every time

    This looks so good, Tessie! I probably told you before, I don't eat grains or sugar. Even so, your recipes look delicious! I have often chopped up an eggplant and mushrooms and sauteed that in place of meat. It's pretty good! And I often make noodles from egg, mozzarella cheese and greek yogurt. Or I just use zucchini sliced lengthwise. It doesn't cost that much when I can find the ingredients on sale (but we know how expensive eggs are, if we don't have a resource for those!)

    If your brown sugar gets hard, put a slice of bread in the container and it will get soft again and the bread will get hard! The moisture in the bread is what softens the sugar! Then remove the bread. ( I used the "heel" or the end of the bread) God Bless!

    You can use cooked lentils instead of hamburger in most recipes. Cheap and much healthier, no fat.

      I have been teaching my adult son to cook. Showing him how the "sausage" is made has blown his mind. So many things he thought he knew he was eating lol. He doesn't like cabbage or lentils but, I bulk recipes out with both those ingredients and he never realized it😂

      Mary I have sliced them with a vegetable peeler to make them thinner & the zucchini absorbs the taste of the sauce & spices! It’s delicious!!

    Tessie you don't need to boil noodles I just add a jar of water along with the sauce an bake about 45 min. to an hour till it's bubbly.❤

    Hi Tessie, try putting the dry herbs into the sauce and not on top. Dry herbs need liquid and heat to infuse the flavor. I dont know if you have ever tried pumpkin lasangna. It is cooked and pureed pumpkin with garlic (generous amount) and thyme, salt and pepper/chili with cream cheese/ cottage cheese and feta cheese, sometimes we put zuchini slices in it too (no tomatoes in the dish) . It is usually meat free, but minced meats or slices work too. it is topped with shedded cheese of your choice. If you use dry lasagna sheets, then add some liquid to the pumkin and to the cheese mixture. 🐸

    That is looking a great meal to me :) Zucchini is a vegetable I would recommend for a poor man's garden. You can do quite a lot with them, they are versatile. A few plants and you have plent for a whole year. Back in the day (almost 30 years ago) I wanted to try them out in the garden. My father and grandfather never had them on their gardens, and I thought.. 'well they are famil of the cucumber, so 11 plants should do the job'. Later on I read somewhere what a single plant could produce.. I can tell you that my whole neighbourhood had zucchinis even more than they needed LOL

      That's hilarious because that's what my mom did too back in the '70s. She planted a row and she grated it up and froze it. What she couldn't give away. Lol. We had fried zucchini, zucchini bread, zucchini in everything. Thank you for bringing back a hilarious memory. PS: I don't plant zucchini because I got my fill then!! Lol I plant cucumbers.

      Hi Pam, you can blanch them when theyy are sliced and put them in the freezer. Or use them in meals and freeze those. When I can them I like them spiced with onions (Musterd seed, turmeric, dill seed, bay leaf and juniper)

    Lentils will also provide some 'bite' versus or in addition to meat...and/or consider mushrooms. Otherwise, I have made a 'clean out the fridge lasagna---anything with pasta, sauce and cheese is generally amazing if you are hungry enough.

    Oh, God, you saved me a lot of research. I love, love, love your channel. We are both returning and home. I’m on disability from the career I worked so hard to accomplish and after 25 years I was far from retirement but disabled out. My heart is on SS and receives a small pension after 30 years. I struggle to get a balanced meal on the table but can usually come close. I planted 3 tomatoes this year in buckets and got 5 tomatoes. They split on the vine and never got green enough on the vine so I picked those and they rotted. Kansas is having a bad year for tomatoes and peppers. I did get 3 nice peppers but that was it. I’ll plant more flowers next year to bring in more bees. Please keep doing these kinds of videos so I can learn more. Love and Hugs. ❤❤❤

    FYI people
    If you have regular lasagna noodles
    You can skip the parboiling by soaking them in hot water!
    They become like the more expensive oven teady noodles!
    Great especially when its really hot outside and you don't want water boiling and saves on fuel to! 😁

    You do need a bit more liquid eith these as they need to cook further so thining out your sause works just fine.

    🐯 Zucchini Lasagna is very good. We use to cut it longways and use Zucchini instead of noodles.Any way you do it. It is good and cheap

    Good Saturday evening, dear Tessie!
    Aren't we all supposed to look very disgruntled and unhappy when we're cooking meals for the purpose of getting out of debt? 😀 LOL! Isn't it supposed to be all about "blame and shame"? Aren't the recipes supposed involve layering soda crackers with swamp water and grass clippings? LOL!
    I'm so glad to see that happy smile on your face! As you have said all along, frugal living and preparing for events that we hope won't happen (but just possibly might) don't have to be done in a joyless, fearful way/attitude! And you're living proof of that!
    If you served this yummy looking lasagna to guests and didn't say a word about the fact that it was extremely low cost, I would bet that they would never figure that out! It just looks like a really creative version of an old Italian classic dish. (And I would never tell! 🙂)
    I know I've mentioned this before, but I often think of your wonderful channel as "Frugality Without Tears." And I still believe that! Living simply really can be done with a joyful spirit, and you and Kenny are living proof of that!

      @@pr9764 Bless you for appreciating my sometimes very silly sense of humor, dear Andrea! Like you, I enjoy Tessie's happiness and smile. Those are most needed when times are the most difficult, I believe, and that is truly one of her gifts.
      I love zucchini as well, and this time of year they're (fortunately) plentiful. I'd love to try this as well. But I did make some lentil soup yesterday (very frugal as well!) and I'll need to finish that before I undertake a new project.
      I'm told that lentils are heart-healthy because of the magnesium that they contain. But they also do taste good -- a nice "fringe benefit!"

    Hi Tessie I actually would prefer the zucchini instead of hamburger meat in my lasagna. I have made it before with zucchini and a friend came over and ate supper with me and loved it. I made a yellow squash and hamburger casserole this week. It was so good! Great advice Tessie about making veggie lasagna! I am thankful for you and your advice.     When I make my lasagna, I use the regular noodles and I don’t boil them. I just layer them with sauce. I shred my zucchini and do a whole layer of just zucchini shred it up and when it cooks it’s like almost having a meet later.

    Good morning, Ms. Tessie. I sure do miss the traditional lasagna dish. Ten years ago, I became allergic to tomatoes. I do change all my recipes around, and while the food is good, it doesn't taste like the original recipe. Live you vlogs 🤎.

    I love zucchini! I have quite a lot of it and need to figure out how to cook it. I have plenty of cook books to look through. Our friend also likes zucchini. She may take some from us as well. I want to try the lasagna made with zucchini too. ❤😊

    Hey Tessie , I store my brown sugar in a big zip lock bag and put a one slice of white bread in the bag with the brown sugar. and the sugar never gets hard. have you ever tried that or do you have another way? cheers!

      Hey cream-curd, I do the same thing with my brown sugar and I keep the bag in the refrigerator. I'm wondering now if the piece of bread will mold because I've had it in there for almost a year and sugar is soft but I have not thought about replacing the bread until tonight. Now I'm afraid to use it lol 😃

    Oh yummy! I've never used the zucchini in mine but have many times used eggplant in place of the noodles. The kids could not tell the difference. Have a blessed day friend

    I’m making this lasagna tommorrow and putting it in two containers. 1 to eat and 1 to freeze. Now that all three girls are working and going to school having a meal we already have ready to go is great. ❤❤❤

    I can't remember , did you do a lemon rind and vinegar soak to be used as all purpose cleaner (after soaking for 8 to 16 wks at least), when it's ready how many parts solution do you use with water?

    Tess my mom made something similar to this but she used both zucchini and squash no noodles but made it like lasagna with meat sauce and cheese. You can make farmers cheese and use like ricotta. Looks delicious.

    I like cutting my zucchini longways and using it as a lasagna noodle. I actually love it more then the regular lasagna noodles.

    I'd like to try this since my favorite type of lasagna is vegetable lasagna. I'd only make a small one because I'm the only one who would eat it in my house. I haven't watched in a while, so I'm catching up and binge watching today. Loving the new direction your channel is going with going back to the 1800's type of life.

    Yum. That looks delicious. Have you ever tried using eggplant instead of zucchini? I like to cut long thin slices to layer. I love vegetable lasagna...I think I know what I'm having for dinner tomorrow!
