    i first saw Aki on Jamie Oliver's FoodTube channel and he prepared this on a charcoal grill. i tried it and since this it is one of my favorite things to cook and eat. Afterwards i came to subscribe to Aki's channel because it was soooooo good I wanted more of his recipes

    The "hard fiber" on the surface of the tenderloin (and other meat cuts) is called "silverskin" in English.

    Note: You don't have to use tenderloin, usually souvlaki has a mixture of fatty pieces and lean pieces. It depends on your diet. I reccommend a fattier piece of pork for more flavor.

    Looks absolutely delicious. Why would you soak the skewers in the wine instead of just plain water? Doesn't seem like it would impart any flavor while cooking.

      not really sure, but wood is quite absorbent. So if you soak them in water with rosemary and stuff its takes on the water and the oils from the rosemary. Same with the wine. So skewers are now full of liquid. This liquid is released during grilling/cooking due the heat and wants to evaporate. But it cant cause there is meat around it. Hence the liquid and the taste soaks in the meat. Its not much as the skewers are quite thin but i guess one still could taste it. And even if it doesnt, little things like this always make me feel like a fancy skilled chef when i do that =)

      yes, ofc that functionality is added to it as well by the soaking. But OP's question was rather regarded if its any use if you flavour the liquid as he seemed to know that general soaking needs to be doe =)

      Toffsen100 - Fair enough. Thanks makes sense. I was just wondering why not add some wine to the marinade itself for the flavor rather than wasting it on skewers but I see your point. Thanks for taking the time to elaborate. Appreciate it.

      as whitewine or wine in general is quite sour, you dont want to mariande meat in in for long. Generally acidic liquids are good for marinades as it makes the meat softer (i.e vinnegar) but also one shouldnt marinade the meat to long otherwise it will get tough again. As the pork itself already has a better tasting marinade vine would be overkill. Lemons, vinnegar or plain yoghurt (sour milk bacterias) make a much better and tastier marinade, not as sour as vine, stay on longer, meat gets more flavour. Hence its better for the skewers. Or making a nice braising/sauce liquid =) Thx for the question, really got me thinking about it as well.

    super recipe only thing... in the video the meat is undercook you can see pink raw pork but nothing we we cant adjust. well done!

      υπάρχουν παραλλαγές στο σουβλάκι, είτε το φτιάχνεις σκέτο, είτε το φτιάχνεις με λαχανικά. Το σασλικ δεν είναι ελληνικό σουβλάκι, είναι αρμενικο, γεωργιανό, ρώσικο... Συνήθως τα κομμάτια κρέατος είναι μεγαλύτερα απ'οτι στο ελληνικό σουβλάκι.
      Το κρεμμύδι μαλακώνει το κρέας, το κάνει πιο ζουμερό και νόστιμο.
