VEGAN HIGH PROTEIN CHICKPEA BREAD⎜ NO OVEN⎜GLUTEN-FREE

  • This chickpea bread is an amazing alternative to your old everyday bread! You can make easily using only affordable ingredients that you probably already have in your pantry. Also, it is ready in no time because you don’t need to knead it, which is brilliant! Plus, it is gluten-free and has lots of proteins which makes this super bread perfect to be enjoyed in the mornings before starting your day!
    NO OVEN GLUTEN-FREE CHICKPEA BREAD⎜VEGAN HIGH PROTEIN
    INGREDIENTS:
    1 1/2 cup of cooked and drained chickpea
    Salt to taste
    1/2 teaspoon of garlic powder
    1 tablespoon of olive oil
    1/4 cup of plant-based milk or water
    1/4 cup (plus one tablespoon, if needed) of cornstarch
    1 teaspoon of baking powder
    2 tablespoons of lemon juice
    Mixed seeds
    CUPS MEASUREMENT:
    1 CUP: 250 ml
    1/2 CUP: 125 ml
    1/3 CUP: 83 ml
    1/4 CUP: 62 ml
    METHOD:
    Add the chickpeas to a blender along with the garlic powder, salt, olive oil, and milk, blend it for about two minutes.
    Remove the blended chickpeas from the blender, add them to a bowl, add the remainder of the ingredients except for the seeds. Mix well until it's well incorporated and lump-free.
    Cover it and let it rest for 15 minutes.
    Grease an 18cm skillet, place a sheet of parchment paper on the bottom of the skillet, grease the pepper as well, and pour the chickpea batter, smooth the surface with the back of your spoon, and sprinkle some mixed seeds on top.
    Cover it and put it on the stovetop at the lowest flame possible for 35 to 40 minutes. This time may vary. Alternatively, you can bake it in a preheated oven for 30 minutes at 180℃.
    Flip your bread with the help of a plate, place it back in the skillet, this time upside down, cover again and let it cook for 5 to 7 minutes more.
    Remove your bread from the stove, remove it from the skillet, place it on a cooling rack and wait until it reaches room temperature before slicing it.

    Chick peas are one of the only things you don't need eggs or cornstarch with because it adheres well on it's own. Really great for grain-free recipes :D

    Loved it! My lowest flame is not low enough so next time will try the oven. Left it soft in the middle and it resembled potato borekas in texture. Today is cool outside and we enjoyed eating it warm wit a chopped salad for lunch! Brilliant thanks

      You could buy a mini airfryer oven or a combi microwave that has a convection oven.

      @@kathryngannon485 hi! Thank you for your suggestion, I did think of that originally but I seriously have no room for an oven what so ever! I did buy an airfryer, a ridiculously tiny one, I think I could bake one muffin at a time in it… one.single.tiny.muffin… the idea is so depressing I haven’t tried 😂

    perfect! i was given so many cans of chickpeas and was excited because I was thinking i'd be able to make a lot of things but most of the recipes are calling for raw chickpeas! where you would grind them for flour so kind of gave up looking around anymore for bread/tortilla and omelet recipes but then I find this just on accident. Also, I don't have an oven so double win. I may try in my instant pot and just put the ingredients in mason jars as I have had good results making muffins and banana bread that way.

      I did make this and without cornstarch, instead, just ground up some rice and used rice flour. I don't have a flame so used medium-low heat, mine came out not so fluffy as yours but lightly crispy on the outside and soft but not mushy on the inside especially today after letting it sit overnight- it's now portable.

    I feel it’s a good idea to use the dehydrator, spread the mixture onto the sheets at about 1/2” thick. I’m going to try it🙏🏼💜

    That looked more like a savory pudding than a bread. but I guess it ony matters what it tastes like ! I will have a go & hope for success. Many years ago a lady who fed my family one day on holiday, produced a 'bread' in her frying pan that I have often thought about & wondered how on earth she did it - it was really delicious, but it might have had yeast in as it was more like a big roll in texture. I hate using my oven, so any way to just produce something quickly on the stove top is exactly what I want ! Thank you for great ideas !

    Oh this looks wonderful. Another one of your brilliant creations for us to add to our meal plan. I always trying to add more nutrients to my food since I lot my sense of hunger and most of my sense of smell after an accident that caused a traumatic brain injury. Without the need to satisfy hunger, eating is a chore to me so I need to consume as many nutrients in every bite that I can.
    My question is do you think substituting oat flour for the corn starch would produce a nice result?

      Good question... I haven't tried and I would thing that nutrition wise oats are better for you but I am not sure if they would do the job in this recipe...

    It kind of reminds me of cornbread. I think when I make it, I will put some sage and rosemary in the batter and top it with everything bagel seasoning.

    Yum..that looks fab. Will try it. I make a Gram flour based flatbread as a pan pizza base. Works really well. I am wondering if you could do a video for the best gluten free loaf bread you know about? I am yet to find one I am happy with. I bet you could come up with something delicious. 🙂 p.s an extra challenge is that I don't eat any of the grass cereal grains!     The chickpea bread came out very good. I had decided to use garbanzo flour since all it is garbanzos.I thought 1 cup to replace 1.5 cups of the beans would be right, but it was too much. I added enough almond milk to get the consistency in your video. Didn't increase the amounts of anything else and baked fine. Reminds me of soft shortbread in consistency. The flavor is quite pleasant to me. Will make again. Since it canMe out so well with the one cup, I’ll continue to use that.Thank you, Chef Jana.
    I try not to cook with oil. I’m going to experiment and see if replacing with avocado will work.

      Cris, wouldn’t you be worried about the avocados oxidizing? Or would cooking stop that similar to how applesauce doesn’t brown?

    Thank you chef! I tried this recipe tonight but I was out of cornstarch so substituted tapioca flour..it kinda worked but one side of the bread didn’t cook through. I used a cast iron pan. Chef Jana would this work with arrowroot starch? I wonder if I had baked it would it have worked better. Anyways the mixture of chickpeas, almond milk, olive oil and spices was so tasty on its own! I also included about a tablespoon of the Aquafaba. I think this would be very good with chickpeas made from scratch.

      Yes, I'd rather use arrow root vs cornstarch, is at all possible.

      I wanna try as well and will definitely substitute the corn starch for cassava starch.

      Tapioca starch behaves different from cornstarch / potato starch. It does not absorb liquid the same way.
      Example: I use tapioca starch fore some potato patties I often make. If I am out of tapioca, I must use half the weight of cornstarch as replacement. They are not easily interchangeable.

      Tapioca and arrowroot are interchangeable but neither with corn or potato starch. The two groups react differently to prolonged cooking over direct heat. Corn and potato are better suited here as they will continue to thicken.

      Sure, you can use either potato starch, tapioca starch or arrowroot powder :)

    Why didn't you start with chickpea flour? I use it all the time combined with rice and millet. Makes good bread.
