  • After a lot of experimenting, fermenting, blending, and countless failed results trying to make the perfect cheese, I have decided that sometimes the best thing is to go back to basics and that's exactly what I did here. Potatoes. That's it. And there you have it, melty, soft, tangy, silky, delicious! Oh, and have I mentioned, Hassle-free? So I hope you guys enjoy this amazing vegan cheese as much as I do!
    Cheers!
    MY SECRET SOY-FREE, NUT-FREE, GLUTEN-FREE VEGAN CHEESE⎜READY IN 10 MINUTES
    INGREDIENTS:
2 - 3 large cooked starchy potatoes (approx. 2 cups of mashed potatoes)
    2 tablespoons of lemon
    1 teaspoon of salt
    1/4 teaspoon white pepper
    1/2 teaspoon of onion powder
    1/2 teaspoon of garlic powder
    1/4 cup olive oil
1/4 cup unsweetened non-dairy milk (or less)
    1 tablespoon of green olives
1 tablespoon of the olive's brine
    2 tablespoons nutritional yeast
2 tablespoons of sour starch or tapioca starch
    2 tablespoons of cornstarch
    METHOD:
Blend the olives, the olive brine, the plant-based milk, and the olive oil until smooth. Set aside.
In a food processor, add the remainder of the ingredients plus the previously blended ingredients, except for the sour starch and the cornstarch; process everything until smooth. Add the sour starch and the cornstarch, process it a little bit, only enough for the starches to get incorporated into the mixture.
Add the processed mixture to a pot on medium heat and stir for 5 minutes. Transfer the cheese mixture into a previously greased mild, cover, let it cool until room temperature then put it in the fridge for 4 hours.

This cheese recipe is insanely delicious. Omg I’ve had such horrible experiences with making vegan cheese; it’s always been gross, horrible texture, or made of ingredients a poor college student like me couldn’t easily access. I really appreciate how this is made of cheap and accessible ingredients. I just love how delicious this was! It made me subscribe haha.
I also made this cheese with some substitutions. I forgot to peel the potatoes, I used coconut milk, coconut oil, and I omitted the olives and brine. I couldn’t stop eating this. It does melt, but it’s not as stretchy as real cheese, and crisped up under a broiler. One thing I will say is that I wish she would have demonstrated how the finished product melted and stretched.

Some of you are asking me what is sour starch, my apologies, I forgot to clarify this subject; sour starch is a fermented tapioca starch that's perfect for making vegan cheese! You can find it at your local Latino shop or online, so if you are interested here is one of the Amazon the links for the sour starch I use: amzn.to/3iHT7Ab . Love you! ❤️

We now have a big variety of wonderful vegan cheeses, such as Miyoko’s, Violife, Chao and others BUT I’m so making this cheese recipe for the fun, I’m sure for the taste and it looks inexpensive. LOVE IT!

I don't have cheese alternatives in the supermarket and in the natural store they usually cost around 10€ so I appreciate recipes like these.

@@user-dt3hk7fu8w we have violife but it's extremely expensive... and i mean extremely, extremely expensive... $5-6 in South Africa

@@LyallvanderLinde It seems like cheese is almost always the last to go (because the manufactured plant versions are more costly;they are usually made out of nuts, they're still more niche than plant meats, they are a hit or miss.)
      I thought I couldn't give it up...
I first gave up parmesan and milk for nutritional yeast and plant milk.
At first,I didn't like it. Then my tastebuds changed. I still couldn't give up cheese, then for some days I went without it. It started to taste way too greasy/salty. I still gave in when it was given to me but I started to be disgusted when I made a real connection to how it's made.
It's gross...do I still think gorgonzola is dope? Heck yeah. Should a cow and her baby suffer for me? Heck no. Who cares if I don't have a vegan double-cheese pepperoni pizza here,I can ask for marinara with veggies.
Some say being veg was harder X years ago.
I don't agree fully. Many live in areas where the direct alternatives aren't available/cost too much (it's saddening that the meat and dairy are subsidized instead) but they still live off whole plant foods!

Most of those cheeses Violife etc., are heavily processed like real cheese. So it's good to make your own...

I made this recipe yesterday. It tastes like potatoes instead of cheese. I think I will try this recipe again, only I will add some fermented tofu cubes and a tablespoon of the brine they are in instead of the olives and olive brine. Also, I was thinking I might also ferment the batch for a couple of days on the kitchen counter by adding a bit of Rejuvelac or Kombucha to get the potatoes to sour up a bit before cooking. Thanks for sharing. I love watching your videos!
