    Nice video and work. As a suggestion might try tracing out both sides before taking off fillets. Rockfish are notorious for dulling knives and it's easy to accidentally cut through side #2 with side 1 already removed. We also freeze rockfish with skin on as it serves as a freezer guard. We do however remove bones and the fat line before freezing as the fat line will indeed get gamey after being frozen

    Wish i watched this before i fileted my cabezon😂 needless to say i did a horrible job with a dull knife n lost prob a quarter to a third of the meat with pin bones all through my filet. Shucks. Ill come back to this next time!

    He uses the quick method. It has less yeild. Rockfish smell horrid when you gut them so avoiding the stomache like in the video. If you are ok with the smell you can gut and go through the pin bones all the way down and cut them out because the pin bones being pulled will rip the filets. Rockfish dull knives real quick too so be aware

      That’s another type of rockfish, so that makes a lot of sense

      @@frednovaes5888 no need to gut them! But once u fish them out of the ocean definitely bleed them! It makes a huge difference in taste! You won’t believe it! They keep for a long time on ice and the meat tastes and smells fresher once it comes down to filleting. Very easy to bleed your fish too. Watch vids on that as well

    It should take 3 easy smooth cuts to cut rock fish lincod salmon and many others if you really know what your doing all this extra stuff rookies mistake straight up a 1000 lb in 2 hours if you cant cut that much rock fish you aint ready for the big boys
