No, thank YOU., I never realized how much meat I wasted by cutting the head off and not following the contour. I have not been brave enough to try a salmon tartare, but I may soon. This is really a wonderful video. You utilize virtually all of the useful meat of the fish. Quite impressive! Bon apetit et merci encore
This is an excellent example of how to properly filet and minimize waste! Don't forget the collar and cheeks! Lastly you can also save the head and bones for delicious soup stock
or you could do what I do and fillet right on the bank of the river or where ever your fishing and toss the bones and things back so other fish/ shell fish can have it.

Hi. Thank you for visiting. The knife I am using is actually not the best knife for the job. Like you say the blade is stiff and if you are not use to it you might not do well. You want a filet knife with a flexible blade that will follow the bones better. It look like this is the kind you have. I hope your salmon turn out well. Cheers!

not trying to start anything... but I've filleted a lot of salmon and your way takes a lot of extra steps. All I have to remove is the pin bones when i'm done filleting.
Nice video. I can cut or clean salmon many ways as fast as rockets, but still you learn something from somebody. Like taking out bones with vegetable peelers. I normally keep bones and clean nicely fish scale nicely, but never take out skins. skins are more tastier when it is crisp . Two way is best and one with Japanese Deba knife and other north american thin fillet knives. I found to clean and cut the gut of any fish has great knife(small blade only ) is Swidesh Fishblade made by EKA. This knife is very sharp, but small blade. In america you can find many, but I like Kershaw Clearwater 7-Step Adjustable knife(made in Japan blade) and they sell made in tawian or China blade too(avoid those cheap steel)
Bazlur Rahmi worked in an Alaskan fish company for a month. The Salmon came from the boat directly pumped to me. where scarred salmon would go to the canning, and vitamin prepping. And unscathed fish would be cut to filets. which i only did a short time. it wasnt rocket science, you basically saved as much meat of the fish as possible, by cutting away the rest. The fruit peeler as a deboner was the highlight of this video and the dudes snazzy french accent 😂😂

Great technique, I've never thought about using a peeler for getting the pinbones out, but I'll be trying that the next time for sure. One question: Are you using a flexible blade for this or a stiff one? The back looks kind of wide so I'm guessing it's a stiff one. Is that what you would recommend or is it just personal preference? Interesting trick with the peeler. I'm a barbarian. I use the same needle knose pliers to pull bones as I do to remove hooks and cut line.

Chef, what is usually the dark spots on the salmon. I usually find it in smoked salmon. Is it fat? Dirt? or something else?
Is it okay to use a gyuto for this? Fujiwara Kanefusa FKM stainless steel to be exact.
