Sweet potato goes soft really easily just in the oven anyway, man she literally made a meal of prepping the sweet potato! Just toss them in a bowl with the oil and seasoning and bang them in the oven at 220 for 25 minutes.
Honey is only healthier if it is untreated, raw. Then it contains micronutrients nowhere else to be found. In general it is not sold like that in shops for foodsafety reasons. You have to read the label very carefully to find out if and how it is treated. In general commercially available honey will be treated one way or the other and than it is just sugar.
