Then they are loaded onto aircraft and transported to their destinations. Once there they are gradually warmed back up. Thousands of miles away and days/weeks after capture they are sold as fresh. When covid happened the lobsters already prepped for shipment were instead released back into the sea.
The lobster is cut in half like that because that is how Caribbean lobsters with their harder shells are usually served. So, people are used to that presentation in the islands and South Florida.
Any good restaurant owner or decent chef should be thrilled to meet the guy who helps make their success possible. Cheers! That dinner should be on the house.

@AA-il9pc you have that the other way around. Clawed lobsters like Maine lobsters are more closely related to crawfish than spiny lobsters are. Spiny lobsters have no claws (unlike Maine lobsters and crawfish) and are more closely related to slipper lobsters. But both spiny/slipper lobsters and clawed lobsters/crawfish are more closely related to each other than they are to other crustaceans.
My grandfather had a small lobster fishery in Nova Scotia, just north of Maine so even though I grew up very far north, we always got the first catch of the spring. Just seeing him pulling the meat from the shell hit me with a wave of memories. Our huge cherrywood table with a pile of lobsters and little dishes of butters. Barely any talking because it was so good, and smiling greasy faces. 🦞😅

They usually bounce through a hub, and typically within 10-12 hours that suckers on its way to being dropped off by the supplier at the restaurant. In a lot of places they’ve been out of the ocean in a tank less than 2 days.
I had lobster in Florida it was sooo over cooked. I had no idea that could happen. I had to ask, how long has this lobster been cooked? The waiter looked at me and said, 'You are from New England, aren't you?' I felt bad that people were being served that. I'm glad you found one that was good. :) Enjoy Miami.

We're you aware... the regular lobster season in the Florida Keys is always August 6 through March 31. The daily bag limit for the spiny lobster season in the Florida Keys is 6 lobsters per person in Monroe County and Biscayne National Park. Everywhere else in Florida allows lobster hunters to bag 12 spiny lobsters as the daily bag limit.
After a whole day on he beach, Dad would take us (1959 - 1975) to the Lobster Shanty. A bib, tools and melted butter accompanied our lobster which cost a few dollars. The experience was priceless.
I believe it was one of those bills that included gratuity. Normally, those bills come with a line to tip beyond included gratuity ("additional tip"), but it's not expected. At least, that's normally what "additional tip" means when I see it but the rest of the bill is blurry so it's hard to tell
