@@MrT2022theres nothing wrong with standing up for your staff as long as you know you’re in the right. I had to that couple of times in my long career in customer service. I’ve seen it all and my managers support me all the way. Esp if you have the incident on your OWN body cameras that might be better than your company’s cameras itself! lol

the grill I worked had a vent system built right over top and it was still a pain to grill raw burgers at times with the smoke it could generate, even at lower heats, great job on making your burgers they look great
We stopped to eat at a little cafe in small town New Mexico. I ordered the Mr T New Mexican...it was a smash burger and when flipped they put pico de gio, mexican cheese, then add the extra on plate. I asked where the inspiration came from and they said YOU!! They ran out of hamburger buns so they substituted tortillas and everyone loved them. You get a choice of flour or corn tortilla and with the pico it was true New Mexican flavor. Red and Green Sauce are on Every table so use as you like.

Hello Chef, Might I suggest to slice the onions super super thin and when you smash the onions down into the patties as they cook on that high temp the onions they pretty much melt into the patty giving it that extra flavor.
I've tried this, and i completely underestimated how fast the onion will cook on a skillet. (The second time I've tried this, it tasted amazing). Been adding onions to my burgers ever since.
Chef, one reason you are getting the smoke you're getting is because of residue on your grill. Whoever used it previously did not clean it, or did a very poor job of attempting to clean it. once you brought the grill up to temperature and started cooking, you were bound to get smoke from the old food that had hardened on the grill.

I was inspired one night by your videos and ground up some chicken thighs with chicken breast, and boy did it come out tasty. It also was quick cooking by using the smash method. Thanks again for your videos, they make my day brighter and my nights better.

use a small ladle of oil and place it on the hot part of the gill and then place your burger and smash it .. the oil will prevent the burn dark spot on the grill .... however -- I would like to try one of your burgers ... it looks great ... cheeseburger ! ...
