Just made these--used Mrs Butterworths sugar free maple syrup instead of the fake honey and added Lily's sugar free dark baking chips for about the same net calories--this is a total winner.

These will be a regular in my kitchen now. The whole family loved these cookies. I had to fight the kids off to get my portion. I used Quest creamy peanut butter protein powder to ramp up the peanut butter flavor and wasn’t disappointed. These are amazing ! I’ve been making them often ever since I found out about this recipe ! One thing I always do, I add a touch of sugar-free applesauce to the mix, it makes a big difference in the cookies and it adds moisture !:) you don’t even taste it
Guys, just FYI I made these last night and halfway thru forgot I had run out of Greek Yogort. I went ahead and made it anyway without the Greek yogort (added a lil extra water, about 50g) and they still turned out pretty good! A bit drier than if the yogort was added, but still very filling and a great snack. The macros were prolly better too (less carbs, less calories but also slightly less protein I suppose). I'd give it a 7.5/10. 👍🏽
To be honest these dessert recipes can be very hit or miss but these are incredibly decent. As usual they are more cakey than a regular cookie but the peanut butter flavor is there and the amount of protein is crazy.

Some reason the water makes mine turn more pancake like. So I don't add water, it keeps the cookie dough thicker and bake for 5 minutes and its great. Even if it looks underdone at 5 minutes take it out because the cookies are still hot in the middle and will continue to set for another few minutes. If you do 7 minutes it will overcook.
Made these twice. Bake for only 5 and a half minutes and no more (first batch was 7 min). If you bake too long the bottom half turns into a sponge. They’re pretty good to dip into almond milk. I used powdered egg whites instead of protein powder (I hate protein powder) and SF syrup instead of honey. The pb2 mixed with yogurt and water is really good and sits on the top of the cookie after you bake.
I made these today. Delicious. Go for the gooey. I used a mini muffin tin and used SF maple syrup instead of the honey since I didn't have SF honey to use. I also put a little SF chocolate syrup on some and the others I put a small amount of SF jelly on top of them. They turned into anabolic peanut butter and chocolate muffins. And anabolic peanut butter and jelly muffins. Awesome 👍
I think this is the best RJF recipe I have tried! Good job! The only thing was that it took me a lot longer (double the time) to make the cookie a more crispy texture in the toaster over.

I tweaked the recipe a bit and it came out to 394 calories and 71 grams of protien! Ingredients and measurements: 24 g Great Value pb powder (100 cals, 12 g protien) 58 g isopure unflavored protien powder (200 cals, 50 g protien) 2 large egg whites (34 cals, 7 g protien) 30 g water 15 g coconut flour (60 cals, 2 g protien) 3 g baking powder 10 g stevia powder I put mine in the oven for 6 minutes at 350 but it came out very dry and cakey. Next time I would add more water and bake for 4-5 minutes. Still great macros!

I had to substitute half the ingredients due to not having them and ended up with choc peanut butter muffins. I'm impressed it's still something nice when the recipe barely resembles the original anymore.
I used convection, put it in the middle of the oven but it didn't come out as expected and took much longer than 5-7 min. Next time gonna try it on bake and put 1 shelf higher.
I wouldn't recommend using that sweetener, it's main ingredient is maltodextrin, which has as many calories per gram as sugar! I believe it says 0 calories because the serving size is so small. I use truvia instead
I made this with my Vega protein powder which is peanut butter tasting, and it came out tasting like pure protein powder with a lot of sugar substitute. I then made it with Rem's Whey protein (even though I am dairy sensitive) and it surprisingly still did not really taste like a peanut butter cookie or even tasty at all. Very surprised, I thought it'd be great. So far I have not found success with desserts on Rem's cookbook. Breakfast recipes on point and so are lunch/dinner, but desserts have eluded me.

HM02 FLY, almond flower is a good alternative. You can swap AP flower on a 1:1. It will just add about 30 calories to this recipe. You’re only using an 1/8 of a cup.

Anyone else having a problem with the cookies being kinda tasteless? I followed the directions exactly except I used sugar free syrup rather than honey, and baking soda instead of powder. I even remembered to use less baking soda, so I don't know where I messed up tbh
