Ingredients
One tortilla wrap
Leftover of stir fry, baked potato, spinach and aubergines.
Spices: pepper, coriander, cumin and paprika
Salt
4 eggs
Cheese of your choice
Pepperoni or alternative if desired
Instructions
1. Grease a baking tray with little butter or oil then add the tortilla to cover the whole tray.
2. Add eggs, spices and salt then whisk firmly to beat the eggs. Add the leftovers and spread evenly.
3. Add cheese then bake at 170c for 10-15 minutes. Cover with a foil for the first 5 minutes then take off the foil.
4. Enjoy with salad
