Nice recipe as always. For any commenters concerned about fat, use lean ground turkey and cut the cheese portion in half and you can drop this recipe down to under 20g of fat per serving. You can go even lower using only scrambled egg whites.

This looks great but imo i'd keep the pico the gallo aside, as it's usually better at room temp or cold to keep the freshness. Great recipe! will use it often.

I love to see the difference between breakfast concepts around the world, as a Brazilian I would never see that as a breakfast. Here we eat bread with butter, maybe with eggs, sometimes cereals, cakes (simple and healthy cakes, nothing like American cakes), and of course coffee. This meal is basically a lunch/dinner in my eyes.

Alternatively, you can mix all this into many tortillas and store them in the freezer (in a freezer safe bag) for quick on the go, breakfast option. Reheats in 1-2 minutes depending on size. Obviously just cut the sausage and any other ingredients to small bite sized pieces.
Good video, easy recipe, but one thing that stuck with me: “You could store them separately, but that would lead to a lot of different containers.” He says this a few times. It’ll still be 5 containers. If you can fit everything mixed into 5, everything separate would also fit in 5. Or just get bigger containers, and fit each part of the meal into different containers. Obviously goes against a meal prep bowl, and just turns into storing leftovers.

I just use two medium red potatoes, some sausage, 3 to 4 scrambled eggs, very little seasonings and a little shredded cheese.

Hi new follower here! Can I ask what type and brand are you using to store the meal prep? Also, how long will it last on the fridge?
    Thank you so much!

Lovely dish. And it' s a great idea create recipes that can be made by lonely and/or busy people to have great meals during the whole week.
But I'm feel me obliged to say that this recipe may be not the best option to someone suffering from gastritis or acid reflux during night (me, for example).
Maybe work if, for example, not use or substitute the bell pepper and the onions and roast the sausage in oven instead the fry pan (vegetable sausages maybe are good options).
I guess that's the spirit, The Chef offers the path and we walk trough it accordingly our own limitations or tastes. Thank you chef, best regards and see you next video.
