The best tip I got from Mr Oliver several years ago on cooking steak is to make use of those rested juices… so many steak videos out there just slice the steak on the board and let the juices waste away

Isn't a T-Bone/Porterhouse made from a NY Strip and tenderloin? Not sirloin. That's from higher up on the back of the cow, correct?

Great recipes and idea for grilling. FYI, that is a Porterhouse Steak not a T-Bone. T-Bones have less of the Filet attached.
No salt on the steak? Is that on purpose because the salsa Verde is salty or did the camera just not catch it?
That isn't salsa verde that's gremolata and I don't think he put salt in either so everything he cooked is bland as hell.

If you have beef, you have T-Bone. Of course any real butcher will be able to give you whatever you want. Not someone in a budget supermarket, but a real butcher who has actually officially learned his craft can of course offer you that cut.

The cloves are also on the board, you see him squeeze some of it onto his meat to taste at the end.

3 errors:
1. Too much pepper. In Italy we don't put all that pepper.
2. Firstly cooked on the bone. This makes that the meat does not seal and consequently loses liquids.
3. We don't put that chimichurri-like sauce in Italy on meat. We serve it as less seasoned as possible.
P.s. I love your potatoes
You forgot one thing it has no salt it is just a bland steak yes it has flavors from the pepper, that gremolata which really isn't salsa verde even know it's perfectly cooked but it's bland as hell.

Too thin for a Fiorentina, in Florence a Fiorentina is at least the Doble of thick and more than a kilo of weight. Then the recipe is OK. 😋
This is properly cooked. One they make in Italy is literally raw.
In Italy that's how they want it. Pretty much raw on the inside. Ofc if you're concerned about your health you would wanna cook it long enough. And this steak is probably only one inch thick so easier to cook on the inside, compared to florentine steaks in Italy that are about two inches thick
