The meat they use for traditional Florentine steak there is an Italian breed of cattle and has different characteristics than American Angus which we eat in the US. Additionally, it is dry aged, and the cattle is slaughtered at an older age. The meat is extremely lean, incredibly tender, and very clean in taste (I found it to be almost sweet in taste), unlike Angus which is usually pretty well-marbled, a bit tougher in texture, and has a bold, savory flavor. Extremely lean meat dries out quickly if cooked too much, and fatty meat like Angus is quite gross cooked rare or blue because the fat is not rendered. I've eaten at this restaurant before during a trip to Florence and although I like medium rare or medium usually, this particular steak is truly best when it's rare. If you ever get the chance to eat here, trust the traditions and order it rare, you won't be disappointed.
Probably the best advice I have seen yet for how to behave when traveling in other counties or far away cities "trust the traditions".

When I was in Florence I had a Florentine Steak and a bottle of Montepulciano. It was one of the most pleasurable experiences of my life.

@@sandypessione1343 yes, you must try the Tuscan steak at Ristorante da Lino. Via S. Elisabetta, 6. One block from the duomo. And for swordfish, there is a place about a 10 minute walk from the duomo. Il Latini Restirante Cafaggi. Preseo is our favorite. They are right in Piazza Santa Maria across from city hall. Try Ciao Florence for all kinds of tours and classes. Ciao and viaggia sicuro

As a Florentine, I confirm that the "Florentine steak" must necessarily be cooked on the grill for a few minutes and must drip blood, other types of cooking are not allowed: cooking it longer would mean ruining the meat and making it stringy, while cooking it rare ("al sangue") enhances the taste.
Precisely for this reason not everyone likes it, but on the other hand Florentine cuisine has many alternatives, including vegetarian dishes, so it is not mandatory to taste it (it is also a fairly expensive dish, by the way).
If I may, I must add a little extra info. The "aging" allows to obtain a "rare meat" but almost bloodless, further emphasizing the flavor of the meat at the expense of the ferrous taste of a unaged meat.
@Karen Reed In theory you are right, but in practice it would be like ordering a burnt hamburger or a raw hot dog: of course the cook can serve it anyway, but the point is that a well-done "florentine" is a technically wrong cooking point, because it is not suitable for the type of meat.

@Karen Reed Eating pasta al dente or cooked doesn't change the overall quality of the dish and it's only a matter of personal preference, cooking a florentine steak too much ruins the taste and the texture of the meat. You're free to ask the chef to cook your steak as much as you want, but just be wary that you are wasting money and good meat. You're not allowed to complain afterwards, ok? No "calling the manager" or any other Karen bullcrap.

I have had the porterhouse at that restaurant in Florence, as well as at two other restaurants. Let's just say this steak, dry aged, and cooked over oak coals is a really good reason to visit Tuscany. And to be clear, it is traditional to cook this meat to just medium rare or barely warm in the middle. It is not cool in the middle like steak prepared rare.

As an englishman living in Tuscany I can honestly say this is the best stake I have ever tasted, it costs around 50 Euros a KG but worth every penny, and of course it has to be large and very rare...a good bistecca alla fiorentina is meat perfection...

Vini vidi vici; smokey, nuanced, tender through 25 days of aging. I went with the Chianina and had no regrets. I was torn between savouring the various elements around the t-bone, and eating it before the hot platform it is served on cooked it further. I prioritised gnawing on the bone over consuming the sliced meat, and as a result the tail end pieces were a little more cooked than ideal, so there are some tactical elements you should consider. Peak cow; I am normally a sheep man, but this cow was so tasty it elevated beef to stratospheric levels
I had a Florentine Steak in Florence, it was amazing!!!!!!! It was an experience and one I will never forget!!!

I lived in Florence as a kid in the mid 70's and loved the steak..rare all the way..drizzled with evoo and a slash of lemon juice... Trattoria Le Cave di Maiano was were my parents took us...sitting outside underneath fig and olive trees

Italian steak isn't that marbled with intramuscular fat, hence they don't cook anything medium or higher. But the meat is well aged, so it has good flavor and texture.

For everyone who complained about the steak being too thick or rare: The video clearly explained those are the requirements for this specific steak.
How else to eat any steak, rare is a must and thick is almost always better.

We had these steaks a while back in a restaurant in Orbatello in Tuscany called D'Egisto My friend had the largest Bistecca Fiorentina on the menu and the owner said if he could finish it in one go at the table he would get it for free. Well he did finish it and all the waiters came out and applauded him when he took the last mouthful.
Here in America we have the Mich., the Iowa, the Nebraska, the Alaska, which is a cross between a elk, deer, and cow.....
I'm a Texan, but I can say that these steaks give us Texans a run for the money! I also agree that you don't need to load it down with a bunch of spices, unless you purchased a sub-par piece of meat. But, when you're spending good money on a quality cut like these Porterhouse cuts (which is what these are, has both the larger Filet AND the Strip), you only need to sprinkle some good Kosher salt on them like these folks do. This is also a really good technique for those thick tomahawk cuts.

And it's your opinion but this steak it's done in this way on a purpose, it has no fat so there's no need to cook it more, or it is not gonna be tender.

Was in Florence in 2015, and enjoyed their legendary steak. As I like my steak rare to blue it was perfect for me. Not so much for my wife who likes hers to be medium to well. The only way to go.

My concierge ardently recommended this steak on my first visit to Florence in 1991. She said it would be a memory to take with me. She was right, best ever and that includes Americas best.

Idk people say steaks have to be cooked a certain way, personally I like mine rare like this. But it’s also completely safe to eat steak raw not even cooked. Just has to be fresh so if you’re going to make steak tartare or something highly recommend going to your local butcher instead of the stores and supermarkets

The Interesting thing is, even tough they have a good quality, they are cheap.
I looked up the Menu and for example there is an offer for 2 People.
33 Euro each. But that Includes:
- A mixed Salat as a starter
-a 1000g or 1kg T-Bone Steak with roast potatoes
- a dessert
and Water to it. That is awesome.
Price for steaks and so on per person in the Menu are around 25 Euro. But it is a Steakhouse so the Prices are really good.
I was cautious because of how rare it is. I usually go medium rare. But florentine steak is absolutely divine. Wouldn’t want it any other way 👌🏽 perfection

The quality is important but so is how it is cut. Using a cleaver over a power saw will make a major difference on how tender it is. A power saw slashes the meat but also slightly cooks it.

The worst bistecca alla fiorentina I've ever had was from Trattoria dell'Oste. It was also the most expensive, and it gave me the runs all night. The best bistecca alla fiorentina I've ever had is from Perseus. Impossible to reach a consensus on anything but I have to suspect that this restaurant either paid for this coverage or Food Insider didn't shop around. Maybe I just was there on a bad day.
