the fruit you had is a flat/donut peach! peaches are in the same family as plums hence why it tastes similar and has the pit in the centre. all peaches have fuzzy skin which is why it has "carpet texture" 😂 if you don't like the fuzz then i would recommend nectarines which are basically the same but with a smooth skin instead :D

Pickling and Fermenting are two different things. Fermentation comes from a long process of sugars breaking down and good bacteria growing (like kombucha). Whereas Pickling is using a high acid count of some sorts (pretty much sterilizing the food) . Side note. If you want to try pickling an easy base is to boil apple cider or white vinigar, sugar and salt. (1 to 1 vinegar and sugar and 1/4 the salt. Then add what ever spices and herbs to it and pour it over what you want to pickle. :)

fyi korean "pancakes" usually have a much larger batter to stuff ratio. like the kimchi pancakes, the batter is basically there to hold everything together so it's usually very chunky, lots of onion or things encased in a crispy thin crusty layer of batter fried from the oil on the pan

the tofu soup stock is actually best with just tofu and veges. if the flavor is too strong, you can add a tiny bit of water, but the water in the tofu and veges should dilute it. if you wanna add kimchi, you should cut it in small pieces, stir fry with a little sesame oil first. or just add a bit of water into that, some tofu, some seasoning to have kimchi stew.

Like not sausages and potatoes salad, but Spätzle (German noodles which are amazing) with a mushroom sauce, Maultaschen (German dumplings), Rouladen (its veggies rolled inside beef, red cabbage, and special soups and stews we have. Also, try a German "Brotzeit"/"Abendbrot": fresh good bread(not toast!!!) With a variety of cheese, meat, veggies and fruits. What you said about pickles is not entirely true, but it sure was cute :D
Pickling involves vinegar and high temperatures for pasteurization (killing off all bacteria) while fermentation is basically "controlled decay" of a certain vegie in an environment with no air (eg: submerged). So pickles are cucumbers in a brine pasteurised while kimchi is fermented seasoned cabbage.
I made homemade kimchi recently and learned this then, so maybe someone finds it useful too. :3

The fruit is a donut peach I believe babe. You get them in supermarkets too but they’re usually softer when in season x

Please do Finnish cuisine!! I think you would lovemakaroonilaatikko (macaroni casserole), korvapuusti (cinnamon roll Finnish style - you can buy them at Peter's yard-cafe in London!), salmon soup..

Honestly I am very happy you are even attempting to use chopsticks, thank you for trying it! Do not feel ashamed if you are unable to use regular chopsticks, they do make training ones if you are very serious about wanting to learn how to use them! :D
