      cuz some. brown people forget the their country use to be one country before white people came in and divided it and ruined our perception of each other. so stupid. I think.

      @@ema7561 its a pre partition dish invented before Pakistan, so its indian. The term indian when talking about food, music clothes etc can also include Pakistan and Bangladesh as they are in the Indian plateau. I'm a pakistani who can't be bothered with individual country names and just call it indian and people shouldn't be offended because its correct.

      @@desimurgi7947Maybe you cant be bothered but we are not living in 1946. Pakistan is a separate country. And thanks to people generalizing food from this region as Indian ,most people are ignorant of Pakistani cuisine even as they eat in Pakistani run restaurants. They call it Indian food. I dont think you would sit in a korean restaurant and call it chinese food..if you want to generalize Asian food. A lot of dishes are particular to and were invented in Pakistan.Pakistan does not get its due and India gets the credit. Probably time people got a little educated , aware of the world and a little less lazy in their generalizations

      @@ema7561 the video is about kheer which Is eaten around entire India subcontinent and predates partition. I am aware of the fact the it's been over 70 years since partition and countries within the region have developed and created their own dishes, those dishes I would identify with their respective countries . Chinese and Korean food is very different and they are 2 entirely different civilizations. A correct example would of been Korea as its been split into 2 what do people call Korean food south Korean or North Korean no they just call it Korean yes they have individual variances but the core is the same. Plus biryani is Pakistans national dish but its invented in India hydrebadi being the most popular biryani variant in Pakistan which was also invented in India, please take a history lesson and study cultures with an open mind.

    When I was little, my grandma use to make small portions of the rice pudding and write our name using cinnamon spice on top of it; it was most beautiful memory I have of her❤️

    Here’s the recipe transcribed:
    8 oz basmati rice, rinsed until clear, then soaked for ~20mins (These are volume ounces)
    4 cans light coconut milk (or 3 plus 8-12 oz milk)
    10 green cardamom pods, seeds removed and ground
    4 teaspoons sugar
    Raisins (if you omit the raisins, add another 1-2 t sugar)
    Wash the rice, then set it aside to soak.
    Pour the milk into a large pan on medium low heat. Stir frequently to prevent scorching; heat for ~20 minutes.
    When the milk reaches a good simmer, drain the rice.
    Add half the cardamom to the milk. Stir to disperse.
    Add the drained rice. Stir every 3-5 minutes for approx 20-30 mins.
    [Do not rush the cooking, or you will scorch the milk and maybe even rice. Just keep stirring. The longer you cook it, the more the milk will reduce, the more starches will be released from the rice, so the thicker it will get.]
    When the rice is cooked, add the remaining cardamom, sugar and raisins. (Raisins can be added at serving, but they will not absorb the milk and plump up.). Cook for approx 5 more minutes or until desired consistency.

      On mine that's where the smaller hobs are, it's easiest to get the heat lower on a smaller hob. The bigger ones at the front would burn the pudding

    Pro tip : pan fry the raisins in ghee before putting it into the mix. It gets bigger and tastes amazing.

    Love your take on kheer. Just a suggestion, add 1tsp of saffron to the milk while it's still boiling (if you want) it's game changing. It will make the kheer so aromatic and will enhance the taste too. Love from India ❤️

    OMG. 😊 It's like Arroz con leche. (Rice with milk). But instead of cardamom Mexicans use cinnamon.

      Yeah I think a lot of cultures have a variation of arroz con leche. Kind of cool how some foods are universal.

      In the Philippines, they cook the rice with milk and cocoa powder and top it with more milk after it’s cooked.

      In Greece and Cyprus we also have a version of it, called rizógalo. Its usually more thick and plain in taste and we add cinnamon on top, but I'd be interested in exploring more versions of this!

    I guess this is one of those foods that kind of spans cultures, because the only differences between this and my family's rice pudding recipe is that you're using coconut milk instead of whole milk and cardamom instead of cinnamon, nutmeg, allspice, and clove. I guess the rice is also different, but that's just because we always use whichever rice is cheapest or the last remnants of a couple of different ones, whatever we have on hand. I even make it with brown rice sometimes for a heartier texture and a more nutty flavor.

    I'm Israeli, In the past I tried to make turkish rice pudding (sutlach) and it didn't turn out great because too big of a fire. I just finished to make your recipe of Kheer and it looks really good! Thanks for the recipe, it's so nice to see your face and hear your voice💜

    I make it like this as well. .. only difference I use jaggery or batasa or michri to sweeten it , as it adds more color to it and I use ( ghee /butter )roasted cassew nuts along with raisins . (And I also brown the rice first with butter / ghee )
    Pro tip , make some white bread along with this ... Payesh ( kheer ) tasts amazing with white breads

    I had never heard of Tan France and then he graced us all with that glorious lentil recipe and made me a true believer.     I've made good rice pudding with brown rice too. It's good with a dab of the sweet tamarind sauce in it, adds color too. Thanks for this, especially entertaining us during quarantine! Wishing you good health.

    I love the way your kheer came out! Gara/gada/thick Kheer is so much better than a runny Kheer. I found a recipe where you caramelize the sugar before you add it to the milk and it gives such a wonderful flavor to the Kheer! Definitely try it if you can!

    I’m making this right now for iftar as my parents and brother are coming over to break their fast with us tonight (I’m 25 and got married last year and moved about an hour away).     one of my favorite childhood memories (i'm latina). we used to add cinnamon sticks, raisins, cloves and vanilla. using coconut milk sounds delicious.

    I like it warm. We make it in Guyana 🇬🇾 when we have prayers or religious holidays. Also we call it Sweet Rice. It’s so good😋

    Good job. it's one of my favs too. I add grated coconut and sliced almonds. I made a healthy coconut nut halwa too (subbed half the sooji for almond meal) you seem like you make delish healthy desserts ;)!

    Mmmm love cardamom so much. This sounds great.
    I drink a puerh aged black tea w/cardamom in it. So excellent.

    I add thinly sliced coconut too. And I love it cold. Kheer is an absolute favourite of mine

    I remember visiting my neighbour as a child and being served kheer. One of my happiest memories :)

    I haven’t read any comments so this might be a repeat. I learned how to make Kheer from an authentic Indian swami and I have stood over the wok cooking Kheer for hours hundreds of times. I now make it in my instant pot and I love it. Moral of my story is that this is a versatile dish and lends itself to individual expression. Enjoy creating Your perfect Khmer.

    My mom likes to add tapioca pearls to her version! I can’t wait believe it’s that simple and now I want some but it’s nearly 2am.

      I actually got to know a couple of days back that you can actually make tapioca pearls pudding ! Always had the mis conception that kheer is with rice or vermicelli 🤷‍♀️
