My friend is Filipino, we went to a spot in the valley and she ordered fried pork belly with this bomb brown dipping sauce. I couldn't stop snacking on it!
I don't know the name of that particular sauce but if its rich and somewhat creamy and a little sweet then it's probably Mang Tomas (Like Coca-cola, the popularity of that particular brand became the known name of that sauce. Or at least my family and I call that sauce as such) Anyway, it's a sauce that we use for Lechon and other deep fried goods. And if I remember correctly its made from Biscocho, Vinegar, some mashed Liver, sugar, starch and spices.

My step mom is Filipino and she makes the BEST food ever!! Her Lumpia is something to DIE FOR!!! sadly she lives in Florida with my dad, so we don’t get to eat it very much anymore 😭 but when I was growing up! Woooooooh we ate too good. Aghhh I miss it so much.

Filipino Chicken Adobo is one of my favorites. But I’ve not been able to find anyone that makes it like I was taught by one of my Filipino moms I grew up around.
Key ingredients: garlic, whole pepper, bay leaf, equal parts soy sauce, vinegar with your choice of meat. Simmer to cook as desired (add water or same amount as soy sauce ± vinegar. I like it simmer fpr 1 hour to tenderize the meat. There are other versions of course but this is my lazy adobo recipe.

The Filipino food looks amazing 😍 I do not know if we have restaurants here where we can eat this type of food. But if there is I will try it one day that’s for sure!
