      T Rdz to make a long story short...from May 2016-December 2016 I lost 50 pounds by eating low carb meals I.e. oatmeal and hard boiled eggs in the am, protein and veggies for lunch and dinner and just drinking water and lemon water. After that I still wanted to lose 25 pounds but I was in a plateau for the longest time. I ended up gaining 15 pounds back. So I got back on it. I didn’t go as low carb but I really worked hard. I have a treat meal every Friday night but the key is to be consistent. It’s literally a struggle everyday. I am in graduate school so I haven’t been working out. For my body atleast it’s all in the food I eat. Obviously working out helps. No excuses but yeah I hope that helps. Also, because I was not eating great before I got back on it I’m sure 4-5 of those pounds were water weight.

    I'm a certificated personal trainer and I use the Inbody machine for my clients to measure BMI, BF, Ect and even using a top of the the line machine the same time every time and consistently will NOT give you EXACT %. It's all an estimate but great to see about where you're at and not just tracking the number on the scale! Thanks for the link and sharing your journey, Jordan! You're such an inspiration!

    I add a tbsp of chia seeds to mine! Another recipe I like to do is an almond joy overnight oats! Same starter (oats and milk) I add a tbsp each of chia seeds, chopped almonds, shredded coconut, chocolate chips, and organic maple syrup! I like mine a little thicker so I put that much chia seeds instead of just a tsp. So good! I'm gonna try your burrito bowls too! Love you! Enjoy!

    I like to cook my sweet potatoes in a pan with a little butter, brown sugar, salt, cinnamon, nutmeg, and cloves. melt the butter, toss in diced sweet potatoes and coat in the butter. let it get caramelized and crispy and I like to add water (or stock) to let it steam and fully cook. then I add the rest of the ingredients to taste to make a nice sweet sauce. sometimes I even add finely chopped kale in it for extra veggie goodness. serve with some steamed broccoli, and brown rice!

    For the oatmeal you can do a hemp heart, flat seeds and chia. I do this for my husband everyday. Is really yummy. And super powerfull. With almond milk and a cup of blackberries. You should try it.
    Instead of rice, I do cauliflower rice.

      I do almond milk, cocoa powder, chia seeds, sweetener, when I'm ready to eat it, I add fresh chopped up strawberries. That's for overnight oats.

    For yams, sweet potatoes, and butternut squash I always Season with garlic salt (or just garlic if I’m leaving the salt out), thyme, black pepper, and rosemary. I prefer my veggies savory and this combination is so good!! Especially the rosemary!

    I absolutely love your meal prep videos. I'm on a super tight budget, toghter than what you talk about. But I constantly striggle with binge eating and massive cravings. I really like watching your meal prep videos because although I don't do vegan I can think of small ways to tweak it to fit my own lifestyle.     Loving your positivity!! Your hard work is definitely noticeable. Over night oats are one of my go to’s, but I wouldn’t recommend steel cut. They don’t absorb the milk like rolled oats.

    I honestly do not recommend adding avocado 🥑 to something you’re gonna eat later. 🤢 it oxidizes so quickly even waiting a few hours it will turn brown and taste so nasty. Add fresh avocado when serving . Alternatively you can make guacamole because it will last longer due to the acidity if the lime. But even that I wouldn’t mix it in something I was gonna eat later. Besides that everything else look very simple and easy.

      If you put some lime or lemon juice on it, it won't oxidize as quick.

      When you make guacamole, add an avocado seed to help keep it fresh just a tad longer.

    For sweet potatoes, cut up, use a little olive oil (if you can or whatever oil) then sprinkle pink salt and top with fresh rosemary. I can't remember temp or time, but it's soooo good.

    Sweet potato with garlic, onion, and curry powder is my go too!!! So yummy! Also chalua chipotle hot sauce is your best friend when it comes to burrito bowls. It's not spicy just smoky! No calories and makes everything better

    An idea for sweet potatoes is adding a drizzle of pure maple syrup or sugar free maple syrup. The maple syrup seems to bring out the sweetness in the potatoes. I've also added a teaspoon or two of coconut sugar after adding the maple syrup. The syrup will make the coconut sugar stick to the potatoes and it makes a delicious crunchy coating that is amazing!!!

    I make my taco salads very similar to this! Black beans and corn with taco seasoning, rice, avocado and green leaf lettuce. I put a tiny bit of plain greek yogurt on it to make it creamy like sour cream, but without the dairy/calories. So yummy, I guarantee you'd enjoy it! 😊💚

    Hey girl!!! Love the meal prep ❤❤❤ I noticed when you were cutting the apples your cutting board kept moving away from and I know the struggle!! You can place a damp paper towel under it and it really helps!!
