  • After showing how Calabrian 'nduja is made, Mrs. Laura Costa and chef Nino Rossi got into the kitchen. Laura prepares the classic recipe of pasta with 'nduja, starting from the production of macaroni al ferretto ("fileja") up to the cooking of the very spicy sauce. Nino Rossi presents a pasta from the Qafiz menu, where the same traditional ingredients acquire new shapes and textures, to surprise the palate without betraying the ancient Calabrian recipe.

    C'è sempre quel lato malinconico nelle ricette tradizionali che anche in chiave rivisitata non c'è quell'emozione.. pur amando la cucina d'avanguardia le ricette della nonna sono le migliori.

      The chef version was over-the-top pointless. I liked the oil flavouring part, but the crunchy sauce is beyond what's desirable in a dish.

    Critiche esageratissime alla versione gourmet e soprattutto non in linea con le perplessità che si trovano sempre nei commenti, ovvero di essere troppo complicate e con poco rispetto per la tradizione. In questo caso l'idea è gourmet è semplicemente trasformare 'nduja da spalmabile a consistente unendolo ai sapori del piatto, che è esattamente quello che chiedete sempre alle versioni gourmet (cioè semplicità, rispetto ingredienti ecc.) e non siete lo stesso contenti lo stesso, bho. Per me una delle migliori versioni gourmet e soprattutto con più senso.

    Magari quella della nonna è più buona (anche se con tutto il rispetto ne ho viste versioni molto più appetitose) ma la lastra di sugo che si scioglie nel piatto è una genialata.

    Im using 'nduja as one of the ingredients when doing tomato sauce or broccoli. It's great also with anchovies of course. Second version looks splendid. Gonna try soon!

    Interessante la versione gourmet. Per la ricetta della nonna, se si aggiunge del pecorino o ricotta salata stagionata da grattugiare, aumenta i sapori rendendo il piatto gustosissimo.

    In questo video sembra di vedere l artigianato e l industriale a confronto ...
    A volte si vedono ricette di chef che effettivamente elevano e migliorano i piatti e i sapori, ma questa volta ho visto il piatto di pasta della signora e avevo fame e ho visto la ricetta gurmet e ancora adesso mi domando se tutto lo sbattone per preparare quel piatto ne valga la pena.

    Can someone with more knowledge than I on this subject please tell me how 'Nduja is actually pronounced? Some of the sites I go to pronounce it n-doo-ya but both of these Calabrian cooks pronounce it as n-doo-ja. Am I missing something here? Are the sites I visit actually wrong?

      In Spilinga, where nduja comes from, it's pronounced n-doo-ja, but in the rest of Italy we usually call it n-doo-ya. I guess you could say the original, correct, pronunciation is n-doo-ja, it's simply not used outside of Spilinga (I have calabrian friends who call it n-doo-ya, for example).

      I'm from northen calabria, the same region where the 'nduja is producted (in the south), and we pronounce n-doo-ya. I think there is not an absolute correct way to say it, but maybe, the right one is n-doo-ja

      My father and his family are from calabria (cosenza). They pronounce it like n-doo-ya. I've never heard that somebody call it n-doo-ja. Doesn't mean that it's the right way, but it's the most common way.
