Sapin-sapin is a layered glutinous rice and coconut dessert in Philippine cuisine. It is made from rice flour, coconut milk, sugar, water, flavoring and coloring. Yes, there are various ethnic groups here in the Philippines and some of them look really distinct like for examples the Aetas of Zambales or the Igorots and Ifugaos of the Cordillera region. However, the ones you were referring to seems to be just your common Tagalog people (some perhaps are from the Visayan and Mindanao region also) but with less or no Spanish or any foreign blood. Plus it's also the lifestyle. A harder life, esp. for those who have to work outdoors all the time, will tend to roughen you up physically. Additionally, the "old rich" here are mostly the ones who are descended from the Mestizos (Filipinos with Spanish and/or some Chinese blood) while the pure native Filipinos during Spanish times, who were termed "Indios" (a derogatory term), were sadly treated as inferior and not given the same opportunities by the Spanish government. Though even the mestizos were also treated as inferior, but more so the Indios.

Dany, you are absolutely right about some groups of Filipinos who look quite different from others. I noticed it also when I was there. I went to Pampanga and it was like I was in a different country. They were mostly light skinned and very good looking and most of them dressed well. Not sure why they were fair skinned, don’t they get the same sun??? Maybe they are from a different tribe. I wish somebody here can explain to me about the beautiful people of Pampanga🤔
