As a Filipino who lives in the province. I don’t really like the green mango that was deep in the water for so long. It makes the mango taste disappear. Fresh green mango w/ paste or just plain soy sauce & chili is the best for me. Hope you had fun visiting the Philippines.

The shrimp paste is an acquired taste not all Filipinos like them but most of the time they hated it the first time but outgrow it as times passes

Yes, there are two kinds of mango in southeast Asia, the Indian mango and the native southeast asian mango. Indian mango is best with shrimp paste
