Vietnamese Tangy Sweet & Silken Creamy Yogurt (Yaourt Sữa Chua Việt Nam)

  • ❤️The heat of Summer is warming up so today I will be sharing Vietnamese Yogurt. Unlike American yogurt that is either sweet or sour, Vietnamese Yogurt is delicately tangy-sweet and silken-creamy. This recipe is super duper simple. It doesn't require an instant pot nor a hot water bath. What I like most about this recipe is that we don’t have to buy the starting culture from the Vietnamese delis because we can start our first batch of Vietnamese Yogurt using regular plain yogurt.
    Thời tiết mùa Hè bắt đầu nóng nên hôm nay mình chia sẻ làm Yaourt (Sữa Chua). Yaourt của Mỹ thì chỉ có vị ngọt hoặc vị chua còn Yaourt của Việt Nam thì vừa chua chua nè, ngọt ngọt nè, và rất mịn màn. Công thức này rất đơn giản. Chúng ta không cần nồi áp suất cũng không cần hot water bath. Điều Nina thích nhất ở công thức này là mình không cần phải đi đến tiệm Việt Nam để mua Yaourt để làm hủ cái. Bởi vì chúng ta có thể dùng yaourt thường mua ở chợ Mỹ (plain yogurt) để làm đợt Yaourt đầu tiên.
    INGREDIENTS (Nguyên Liệu):
    Plain Yogurt (Yaourt Thường) : 1 cup (245 gram)
    Whole Milk (Sữa Tươi) : 4 cups (945 mL)
    Sweetened Condensed Milk (Sữa Đặc): 1 can 14 oz (1 lon)
    Boiled Filtered Water (Nước Lọc Sôi): 1 & 1/2 cup (315 mL)

    Thank you for this video.
    Perhaps my kitchen was chilly overnight but the yogurt took many more hours than the 10-12 hours called for. I had to warm up the oven twice over the additional 5+ hours. But the result was so worth it. My family thought it was the best yogurt they ever had.
    Q: Can this recipe be used with both plant-based milk and condensed milk for those who are lactose intolerant?

    Oh, forgot to mention I also love how you added lime to yours and drank it like a yogurt drink with ice. That's something I've not seen nor thought of myself. :)

    I love your video and instructions. It was very easy to follow. I already made it last night and it came out perfectly.( even though I accidentally added 1 1/2 cups of boiling water instead of 1 1/3.)

      Thank you so much! Adding 1 1/3 cups will give your yogurt a little sweeter and thicker so it is all good hehehe.

    I subscribed because this was a great video! I love the aesthetics of the finished product with all the gorgeous berries and flowers on them. :) I learned how to make plain yogurt about 15-20 years ago from Middle Eastern and Indian friends so I prefer the sour yogurt over the sweetened Vietnamese yogurt (even though I'm Vietnamese). I wasn't fond of using plastic lids in a warm oven or any time there's heat involved. I would recommend covering the jars with a kitchen towel as 1) it will absorb the steam/moisture and 2) prevent any kind of poison from the plastic from leaching into your yogurt. :)

      The lids was freezer and microwave safe so the chance for the plastic to leach wont be possible because the heat wasn't hight to begin with and we also turned it OFF before we place the jars with lids in. But I really like the idea of covering the yogurt with a clean towel 👍as it will absorb the steam/moisture and I will definitely will follow it for our next batch.

    I tried your recipe the other day and it turned out great except for the bottom of my yogurt isn't smooth like the top. Why is that? It's grainy. Thanks!

      I am glad it turned out great for you. Regarding the bottom of the yogurt is grainy, I can only think of a few reasons Juli. Is your starter new or old? Also try not stir too much once the starter is in the milk. I also experienced the grainy issue after my starter has seen it better days hehehe.

    Why does my yogurt come out slimy?

      Oh ... I am very sorry that your came out slimy. I experienced slimy once in all the years I was making Vietnamese Yogurt. Slimy yogurt is caused by the temp being too low. Make sure the oven temperature is accurate and the room temperature is around 72F.
