Instant Pot Vietnamese Yogurt (Da Ua) | Super Smooth

  • Vietnamese yogurt is a common treat in Viet Nam. It is tart and lightly sweet. With the instant pot, it is so easy to do. Please try it and let me know.
    ***Plastic lids weren't used because of two reasons (just for me), didn't want to have plastic inside the Instant Pot, secondly, the air of the steam might not seal the lid tightly which may cause air bubbles in the yogurt. :0) You may try, and please let me know if it work for you.
    Ingredients:
    6 cups pasteurized whole milk
    1/2 cup plain yogurt with live active cultures
    7oz yogurts jars
    1 can condensed milk (395 gram)
    (Longevity Brand is good. I used Nestle in this recipe because it has less sugar content)

      Hello Julie,
      Please do. So easy and so little time to make this awsome yogurt. You can use any vanilla yogurt as long as it has active yeast content.
      Different ways to enjoy this besides yogurt with fruits/or jams. I mix the yogurt with ice and add a bit of fresh milk to make it a drink. Pretty tasty. hihi. You can also use yogurt for banana bread or smoothie.

      Thank you for asking. I didn't heat up the milk.
      I mixed up one cup first with others ingredients for easy mixing process. :0) Milk were straight out from the refrigerator.

    Can we substitute whole milk with almond milk?

      Hello Kimmy,
      I haven't done with Almond milk, but you can. People do it. It will be thicker texture since almond milk texture is much thicker. Store bought almond milk or making it from scratch? If from Scratch, make sure to cook it first and strain out all the almond meat as much as you can.

      Hello,
      Thanks for checking out my video. It is good for two weeks or so in the refrigerator.
      You can freeze a few to make fruit smoothies or icy yogurt milk drink. Once you freeze it, it won't be as smooth as before, but still pretty good. :)
      You can always cut the recipe in half. :0)

      Minh khong hieu ro loi nhan lam. Neu ban khong muon dua vao nhung hu nho, thi cung duoc. Ban muon bo vao luon hu bu do ha? Duoc chu, nhung nho cover lai neu khong thi nuoc se vao. :0)

      Hello Irene,
      Thanks for the question. I mixed all the ingredients in a mixing bowl, then I poured it in a the yogurt jars. Is this your question?
      or,
      You can pour the yogurt mixture in a bigger container like 10oz container or whatever fit the IP pot. After done, you scoop it out as you would enjoy for:
      1. Smoothie
      2. in a bowl with oats and fruits for snacks or breakfast.
      3. Banana bread, etc.

    What setting can I use instead of the yogurt setting to ferment them for 11 hours when my instapot doesn’t have the yogurt setting

      Thank for asking. I haven't done one without the mode, but I was able to find direction online for you. Not all IP have Yogurt mode, but you can still do it. Good luck. :)

      The main thing is to maintain the warmth so the bacteria can grow. I'm Vietnamese but never made Vietnamese yogurt. I learned how to make yogurt 15-20 years ago from yogurt making culture friends (Middle East and Indian). I warm 1/2 to 1 gallon of whole milk or half-and-half in a large pot until you see steam rise, but don't boil. Use a clean pinkie finger to test - if your finger can stay in the liquid for 10 seconds without burning, then that's good enough for the culture to live. I use 1 tsp - 1 tbsp of a good yogurt (whole milk, unflavored and unsweetened) and use lots of blankets to keep them warm. If I made it in smaller containers like this video, I'd keep it warm with a water bath (in a gently warmed oven or an insulated cooler) or maybe even a heating pad. Instead of using the foil, I'd put a clean kitchen towel over them to catch the moisture or condensation. Once they start incubating, do not disturb or move them as the yogurt won't set properly.

      Hello duck,
      You can use the rice cooker for this process. Remember to use broiling water and have the towel cover up before having the rice cooker cover it. Let's it sit keep warm for 8 hrs. Hope this answers your question.
