      Brazilian here.
It's kind of fun that we translate barbecue into "churrasco", but the process is sooo different. It's really hard to see a glazed meat, an 5 hour smoked steak or even something with sauce, like the barbecue sauce.
Almost every cut is cooked in a really hot charcoal grill with only salt, maybe black pepper.
Both are delicious, but they are really different.

Brazilian culture is very warm and hospitality is big for us so it’s definitely an experience to go to a Brazilian steak house. When I was a girl in Brazil I remember going to one of these up in the mountains and it was very casual and the swords they had the meat on where huge. Also they carried tons of them in a very crowded restaurant. Dodging and weaving around people and it was incredible. The gaucho culture is kind of like the cowboys or ranchers here. I miss Brazil it’s a great place to go but remember it’s kind of like the Wild West in many places there so there is crime and be aware of your surroundings. It would be smart to go with guides and stay at a reputable resort.

That's an interesting comment. I am brazilian and I can add that in this kind of restaurant sometimes there are 3 kinds of waiters. It's like 3 levels of hierarchy. Like soldiers, sergeant and lew-tenant. The "soldiers-waiters" are the ones carrying the meat. The meat has to keep moving all the time. When a client wants to talk to a waiter usually is the "sergeant-waiter" who take an order like a regular waiter and the "top level waiter" orchestrate them all. The waiters serving the meet have very specific task. So, the efficiency is related to the fact that to every waiter is assign specific task. It's not an everybody do everything kind of serving tables. They all dress the same but they are not and all the waiters know who is doing what and they talk fast among themselves.

Here in Brazil people love "rodízio" style restaurant. We have rodízio of barbecue, pizza and pasta, japanese food, mexican food. The problem with barbecue rodízio for me is that I dont eat too much and it is quite expensive. For me, its better to go for a steakhouse and pay for a specific cut of meat but I respect what they do. It is not easy.

I work in a pretty big restaurant that's part of a small chain (~10 restaurants in total) and if we get 500 people on a Saturday then we'll probably break some sort of company record. We only have about 8 chefs and four bartenders, though. And two of those bartenders do 1-2 days a week. I'm one of the other two that does the rest of the week.

In Brazil, having meals means an important aspect of the culture, which is bringing people together so that everyone can enjoy the moment in peace and be well served. Therefore, meals on Saturdays and Sundays, barbecues, are long and last all day. Families get together with friends, as a rule, the host of the house makes the barbecue and everyone who goes takes a previously prepared dish. Everyone gets together, opens a good beer, makes a caipirinha and the hours pass without noticing.

I am a Brazilian and it's very satisfying to see people enjoying meat as much as most of us Brazilians do. It is a nice experience for those who never tried a Brazilian Churrasco to go to these places, but what you end up getting is more of the Brazilian Serving Style experience of 'rodizio' (which is waiters coming to your table all the time while you have a buffet open for you and it's all you can eat), instead of the real Brazilian churrasco. You can only say confidently that you have tried Brazilian Churrasco when the heat for cooking comes from coal burning, not from an electric furnace. And in fact, lots of churrascarias in Brazil also use electric churrasqueiras. However, the smoke from burning coal gives the meat another level of tastiness. As a curious fact, the name of this place "Fogo de Chao" means something like "fire from the ground", which is the true way "gauchos" make their churrasco, in which they set fire to pieces of wood on the ground and stick their meat all around it. You can see it here: th-cam.com/video/noVPbRhUsx0/w-d-xo.html. This is not a very common practice throughout Brazil though, and only few do it in the South of Brazil (a few gauchos). Instead, many use churrasqueiras (barbecue places) where they insert coal and burn it to use as heat for their meat. Rodizio is a very common serving style in Brazil, it all began in Steak Houses but it's also being widely common in Pizza places and Sushi restaurants.

I'm Brazilian and that's pretty accurate with what we have. But "fogo de chão" is actually a different way of barbecue. It consists of roasting a whole cow rib (each side separate) over an indirect fire and very slowly (4h-6h). The rib can be held in the center by a giant metal skewer or wooden pegs. The fire is made by logs around the piece, on the floor, in a circular shape, with good distance to promote an atmosphere of very hot heat around the huge cut. "Fogo de chão" means ground fire ...and it's even better!

1000 people on a weekend night, all of them served very very well. Pretty sure that's why when Katie says - . . and you don't want that to happen - or - . . that scares me - . . it's this uncomfortable silence from the staff. When you're doing this well in the food business, must be weird going to another restaurant, because what place is going to have the same level of food and professionalism from staff. Each person, taking care of their particular cut of meat, will serve 1000 people. It's just amazing. I do know one person, I think, who could handle this. She doesn't work at a busy place, but 50 people at the hotel bar/grill, she doesn't need to write anything down. In fact, no one who works at this place is allowed to write anything down. But she does that, and has time to remember what a twice a year visitor ordered first time he ate there. It's just cool that you can elevate a restaurant to be WAY beyond what the average food service worker could handle. I would think you need to be top 1 percent and a lot more to work at Fogo de Chao.

Hi, i'm from south of brazil and this is really like a traditional churrascaria works, the video is incredible, but the music chosen to video was not a traditional gaúcha, so here I will suggest some:
    Raul Barbosa - kilometro 11
Gilberto Monteiro - Prelúdio pra um Beija Flor
Rasguido Doble - Fulgor de Alborada
Renato Borghetti - Milonga Para As Missões
there are many variants of the music styles
We have too the famous "baile gaúcho" where we dance the "rancheira" and many other dace styles.
young people see it as a elderly hobby, so this tradition is slowly dying.
And is good to remember that our traditional drink is the "chimarrão" or "erva-mate" which is a dried herb, we drink it from a bowl called "cuia" with hot water and with a metal straw with a sieve in the herb far end.
