1/4 cup brown sugar
2 tablespoons smoked paprika
2 tablespoons garlic powder
1 tablespoon fresh cracked black pepper
1 tablespoon dried cilantro or Mexican oregano

Picanha should be cut with the grain into strips and then cut against the grain after plating. Salt is the only thing needed, all those other spices just hide the real flavor of the meat.

Cutting it against the grain to go on the skewer allows you to slice it off the skewer against the grain, just like in a Brazilian steak house

The Brazilian steakhouse where I eat only uses salt and pepper and it is delicious.
The Gaúcho churrasco is the original barbecue, typical from south of Brasil, but only with coarse salt and and coal fire or wood.

Isn't Picanha usually cut with the grain and then sliced against the grain when grilled?
We did an alternate way of cutting because we were using smaller pieces on the skewers as opposed to the full picanha on one sword.
It was just wrongly sliced. You re supposed to cut against the grain when you make skewers, but you should slice it along the grain directly on the skewers (as they do in brazilian restaurants) . This mistake reduces tenderness of about 30 - 40% , as the way is made in the video you must litterally rip the fibers with your teeth to eat it.

I’m sorry but it isn’t a legit brazilian style picanha.
Churrasco with no sea salt, is not churrasco.
All this seasoning kills the good taste of the good churrasco meat.
Picanha is heavenly with only salt, a nice thick fat strip and cut properly. The exact opposite of what he does here.
I am sorry, but we Brazilian just add salt on the meat, NOTHING ELSE, the only thing I see in this video that seams Brazilian is the meat, yes picanha is the famous meat for barbecue but we don’t use nothing else than salt, Oh my God! If u tell a Brazilian to use sugar they will laugh 😂

Hey Rene, you're right! Our goal is to remove the excess fat, not all of the fat. It is delicious!
The skewers are a traditional way of cooking like a Brazilian Steakhouse but are not necessary.
@@CertifiedAngusBeefTestKitchen Yes the skewers are necessary if you use the correct type of skewers and the correct grill, where the skewers are raised above the fire and not laid on a grate. That way you can control your temperature by changing the skewer's location (height).
