Ive never seen someone do our traditional dishes so CORRECTLY in a food truck outside of Brasil. This is the REAL DEAL. Slightly more gourmet than our versions but all the flavor profiles are brazilian, no doubt. He is LEGIT.

In this video you see feijoada(that brown beans soup), wich combines really well with rice and farofa. Next one is the pão de queijo, a cheese bread that are traditional in some regions in Brazil, in the video he put meat but that is a plus, you can eat without it.

One thing americans, who may generalize Latin America as being all similar to Mexicans, is that brazilian food is not spicy at all. In fact, Most of South America, and in special the southern half of Brazil, Argentina and Uruguay, are quite... well... sensitive, to say the least, to chilly and spicy hot food.
I mean, most brazilians would die by eating a single slice of a Pizza Hut Spicy Chicken Wings pizza.

What i most love about this dude, by far, is how he uses the opportunity of catering to mainly foreign custumers to *create* more things, hes not simply making what we make in Brazil, since hes not serving to a all brazilian custumers base, he can use this "lack of expectation" to do more creative dishes, for example 4:52 this Picanha sandwhich on a "pão de queijo" bun is definitly *not* "how we do it in brazil" as far as i know its a completely new thing, and that's what's awsome about it. If you are making the local food for the locals, where everybody and their grandma (quite literraly) eats and knows the food, by heart, there's a really strong sentiment about it, and this inhibits more ambitious and flashy inovations, but this guy saw the opportunity and didn't stuck to traditions just for the sake of it, he decided to create something unique and personal while still serving the general idea, spirit and taste of the brazilian cuisine, and that's what a proper chef should aim to do.
