    Dr. Layman is a Professor Emeritus in the Department of Food Science & Human Nutrition at the University of Illinois at Urbana-Champaign. He served on the faculty at the University of Illinois from 1977 - 2012. Dr. Layman earned his B.S. and M.S. degrees in chemistry at Illinois State University and his doctorate in human nutrition and biochemistry at the University of Minnesota. He is recognized for research on protein and amino acids for muscle health related to athletic performance, obesity, diabetes, and cardiometabolic health. Dr. Layman is also a nutrition consultant to the food industry.

    I'm a doctor working in geriatrics, and I've really noticed how the decline in muscle mass is devastating for the elderly. They fall and don't fall well, plus aren't strong enough to even get to.
    The key to staying healthy at old age really is to stay in good physical form.

      Sadly --- loss of muscle is just awful in the elderly!! I see this al the time -- we do lose muscle and sadly end up first with a cane and then a walker and then a wheelchair - become house bound and it need not be. For me hormones well balanced helped a great deal combined with proper diet and yes weight bearing activity. Even walking briskly helps!!! I absolutely agree with loss of muscle - sarcopenia. We did not learn a lot about this in nursing school let alone how hormones too help in a really big way.

    Very eye opening! I’m a 70 year old woman and I’ve been working out with a trainer for going on 10 years. I haven’t seen as much improvement in strength as I’d like and I think this explains why. I’m definitely upping my well sourced protein!

      @Cindy Johnson 100 per cent grass fed beef being the best is a myth. Wid cows do not eat 100 per cent grass. They eat lots of other things like leaves from trees and other shrubs and plants. It's just a marketing thing so people buy it at a premium

    Dr. Hyman, you are an excellent interviewer. You ask good questions and then you let your guest talk. But you are empathetic to your audience and you ask the guest to explain jargon or technical vocabulary and concepts.

    Mr. Layman is bringing all three nutrients into this conversation, fat, CARBS, protein, and showing how all three interact in the body ... Almost no one on the web does this, probably because they do not have the studies to relate to all three. My cap is off to Mr. Layman first and foremost AND secondly to Mr. Hyman for hanging with Don and asking him to explain his words on these topics.

    At the age of 13, the first time I picked up a barbell, it was immediately apparent that weight training was the most potent physical method for improved body composition. Good bye, aerobic exercise, I said. Subsequently, Arthur Jones made the point that the heart exists for our skeletal muscles, not the converse, hence, work the skeletal muscles purposely; the cardiac muscle is subordinate.

    This is the most informative 70 minutes on protein I have found yet.
    Hyman is always accurate, in my opinion.
    Layman has two other interviews I have found so far, 6.25.23
    ​They are longer, add more details on leucine requirements, etc.
    Layman's students include Layne Norton PhD and Gabrielle Lyon, MD. They are smoother, but leave out vital details found here.
    And, Hyman's podcasts are now 90+% information, whereas four years ago I felt he was maybe half sales talk

    This adult has 3 eggs, 2 pieces of bacon, and an ounce of brie, plus several cups of coffee with whole cream for breakfast, about 30 grams of protein. I think I'm doing just fine at 77. :) BTW, I've been a carnivore for the last couple of months eating just two meals a day. I'm rarely hungry. (I had lost 40 pounds on keto). For dinner, I have liver once a week, but mostly just beef, lamb, pork, or salmon. For something crunchy, I have some pork rinds dipped in sour cream. Yum!
    This is working for me. And by the way, I have popcorn I make with coconut oil and ghee when watching a movie with friends, or something sweet for a special occasion, both pretty rare. I don't think they've hurt me, and I don't feel much different when I do. Most of the time, I never eat after dinner until about 16 hours later. I love not having to think about food all the time. My life is busy, fun, and fulfilling, and the only chronic condition I have is neuropathy in my feet, which started about five years ago, along with some arthritis in my thumbs, both of which I'm hoping the carnivore diet will help. BTW, the only "workout" I do is tending my garden. Pulling weeds is enough for me!

      My mother takes a vitamin b prescription for her neuropathy and she says it helps it not get worse. Don’t know you that you need a prescription to add vitamin b, I’m sure some research into which b is most useful would be in order

      Good that you feel good, but I don't think that diet is good for artery health though. That doesn't necessarily cause any symptoms initially.

      @@liahk1000 It’s not that simple apparently and there’s been more studies/analysis on the effects of meat and healthy fats and heart health. I came across this segment and thought it was excellent. What I heard is cholesterol is 100% necessary for health, what we eat doesn’t affect our levels to a significant amount, the more metabolically healthy someone is, the higher their LDL levels.

    Great video, however I do believe everybody benefits from resistance training to maintain and develop muscle especially as we age. Not everyone wants to be jacked but I’ve not met many who don’t want to be able to lift their grandchildren ❤️

    This is such an excellent presentation combination Donald Layman PhD and answers and the questions and the way Mark Hyman MD poses the questions.
    This clarifies many topics for me and also specially clarifies the need for collagen protein. Doctor Layman says collagen is crap-- wonderful take-home message I will that I can use that's my sense. That is because amino amino acids are amino acids there will be incorporated into muscle or collagen as needed. This clarifies than mtor is regulated by different hormones and amino acids and clarify that is turned on and turned off when eating protein.
    I've listened to dr. Layman's and dr. Gabriel lyon's presentations a number of times in a number of venues. All valuable.

    I find that protein timing isn’t just about getting the right amount per meal but also the quick vs slow digestibility. I personally eat my whey protein shake and Greek yogurt (40g) breakfast, seafood, fish or chicken at lunch and beef, lamb or pork for dinner. The whey is the fastest digesting and the beef is the slowest so it makes sense to me to avoid catabolism by eating the slowest digesting at night.

      The truth is you should use a fat source like almond butter to slow down the absorbtion of your whey protein bc youre not properly digesting it.

    Donald says he is OK with time restricted eating and for a first meal to be at 11:am but if you ate dinner at 7:pm the night before and ate a first meal 16 hours later at 11:am, that 16 hour break can effectively be defined as intermittent fasting (which he says he is not OK with). Did I miss something that clarified the difference?

      I heard from another of his videos he doesn’t recommend going over 24 hours fasting so assume he’s ok with intermittent fasting 8:16 etc so long as your getting your daily protein in

    34:00 Whoa! a) High protein, low carb diet no exercise is equivalent to b) high carb, low protein diet with exercise. Exercise being 30 min./day. Therefore, a) with exercise is better.

    I have a book on nutrition published in 1911. The author had never seen a vegetarian who looked healthy.

    If someone is very active running or bodybuilding they need more protein. Isn't protein digested very slowly in the stomach? This means the muscles organs etc are getting a steady slow supply throughout the 24 hrs

    I am 54y.o. Exe 5-6 times /wk strength training and mountain bike and yet. My A1C was 5.7! I am not overwt. I was puzzled at my health condition and no one seems to be able to help me.
    I seeked the help of a fx med doctor here in Israel. Hope to get results soon.
    Anyhow, I definitely need to increase my protein intake and continue to minimize my carbs ( I hardly eat any….) also, sress management.

      Your HbA1c can also rise due to : cortisol (stress driven) gluconeogenesis or due to the fact that if you are near zero carb (eating protein + fat), then your red blood cells just live longer and they get glycated higher before they are recycled (hence higher HbA1c). This is all in the peer-reviewed medical literature. If your doctor doesn't know these, change your doctor.

    I eat lots of animal proteins. Those who don't, particularly women, can choose soy beans. 320g of cooked soy beans in a meal will provide over 2.5g of leucine, equal 380 kcal (or 1590 Kj), with only 18.6g of carbs. The leucine trigger is blood volume dependent. Adding in other veggies that contain leucine will up the amount even more.

      Start with brisk walking to best of ability -- dance and jump too -- jumping rope is good ---stretch!!!!! Then add in more as you go -- the body is amazing --- not too much at first and not too little and then add in when you feel ready. I do not like going to the gym at all do know....so I dance a lot and I do jump and I do jump rope - I walk up steps and down again a few times then add in more -- when the body feels read as I said add in more weigh bearing things like working the arms and the legs -- stay active!!!!!! L(

    What about catabolic process to bring about autophagy and being lean as a precursor to longevity? I mean something doesn't add up here. I understand that muscle is good to maintain base metabolic activity and to save you from you know falling and breaking your hip and all sorts of other functions that maintain your personal health but we have to go catabolic we can't remain anabolic for the rest of our lives cuz that means we're probably eating too much. I think it's a balance and so that's what we need to understand is where is that balance and how do you manage your diet to increase your chances of living a long life. Perhaps we should cycle our bodies through anabolic and catabolic to take advantage of autophagy to clean out the body and to rebuild and to get the ketosis, the benefits of that and at the same time train our body to rebuild itself with the muscles and the activities and the building blocks/proteins that gives us a good scaffolding.

      They said he’s ok with fasting up to 24 hours. If this is done once or twice a week maybe u get the benefits of autophagy without muscle loss I.e. that’s the balance we need to hit after 60 or 65

      I’m a faster and in my eating windows I make sure to get protein in
      I think many people over eat and too frequently so many people are insulin resistant because of this

    Thank you both for this great interview! I just wonder about early time restricted feeding: is it necessary to distribute protein over several meals or would eating all your daily protein in the morning be fine, too e.g. due to improved protein synthesis in the morning. I've heard of muscle wasting on OMAD but it's mostly among dinner eaters, isn't it?

      I read somewhere that the body can only absorb about 60gms of protein at one time, so it may be better to spread your protein over a couple of meals.

    Thank you for this transparent conversation! You have gradually changed my thoughts re: a “healthy”vegan diet. At 66 years old, I am concerned about sarcopenia. I have found it difficult to consume the quantity of protein necessary to stave off muscle loss. What are your thoughts on sprouted beans and grains, which supposedly have more protein once sprouted? Would you consider that quality protein to factor into a diet that still contains animal and dairy?

    The body cells must keep healthy .as well as the skin cells must keep healthy .I saw a pamphlet for necessity of detox .A red apple , nice and healthy red skin apple and an apple with a shrinked skin because of damage .That is how I thought about skin cells and body cells to stay healthy .All that you take in must help body cells and skin cells to keep healthy and must be protected against damage . All the body cells , intestine , skin and hair ( not too much heat and try not to damage hair ) ,all that is part of the body. . I bought a book about herbs and there was about flowers .If I see at a health shop ,some of the herbs and flowers that is mentioned in the book , I buy it ,to give a little bit extra
    ( To keep young and stay healthy is still very important for me .). ( When I was young, 00:00 at night at the Roadhouse because ,my body need a footlong hotdog).

    The comparison with beans is weak at best. First of all, they are mostly carbohydrate! It is possible to eat higher protein by adding concentrated sources of protein in meals such as tofu, tempeh, edamame and seitan. Protein shakes as well. This can get you to your protein goal and will help with body composition as we have seen in vegan bodybuilders.

    Autophagy has only been shown in mice I believe, no human studies proving the same benefit in us yet, so why is is Hyman saying we need to shut off MTOR so autophagy can take place? While it's true we need to shut off MTOR at times, its not so autophagy can take place (which is only done by fasting) but more so we just off MTOR by eating less at our meals and less overall so MTOR is not triggered. Studies show caloric restriction is what benefits us more than fasting long enough to induce some kind of autophagy.

      Not quite the same. For Dr Layman IF involves going for very long periods without food. ie. A two day fast. Whereas time restricted doesn't involve such a long period. The emphasis being on the feeding window.

      Prioritize protein. Limit refined grains/flours. You can eat plenty of fruits, vegetables and healthy fats as long as you meet your protein target.
      If you want to eat a lot of carbs, you need to be seriously physically active because your muscles will burn carbs first and leftover carbs turn to fat (via the liver) and you will store that fat as body fat.
      Basically, eat a good amount of protein and exercise (cardio and lift weights).
      A high carb, low protein diet negates exercise benefits. It’s better to eat high protein, lower carb diet.
      The combination of proper protein intake and exercise is a very powerful metabolic tool (faster metabolism) and you will have more lean body mass.

    I'm a scientist and found this very difficult to understand and be practical about. Dr Hyman did his level best to clarify, he was excellent. I'm not really much further advanced in my understanding of ptotein and diet, the talk was too dense with too much detail. This doctor seems to know his stuff but someone else should take over the communication of ideas and practicalities.

    I’m a pro bodybuilder 5-7 247 pounds at 59 yes old . At 49 years I was at my all time best . Then I took 4 yrs of no training due to my spouses death . I was 280 before I took the 4 yrs off . Then came back weighing about 210 pounds - no muscle . Within one year I jumped to247 pounds and lean . What I learned is my strength was cut by 50 percent - i was doing Reps with 150 pounds D-Bells and now I am only doing 90 pounds . But surprisingly I’m still heavily muscled. I made adjustments to my training by slowing down the movements and really concentrating on both the positive and contracting the muscles. negative - I don’t take supplements as I just eat real food . I love to know Don if you have studied the effects of using insulin to build muscle . I’ve used not only that but GH and anabolic in my prime when I hit 300 pounds at 5-7 . I found insulin Just made me fat . Not sure if GH had much effect .

    What if I'm a 64-year-old who is 4'10" and 80 lbs - and consuming 80 grams of protein a day- do I still need 2.5 grams of leucine per meal - especially in the morning?

      As long as you are getting at least 30 grams of animal based protein at your first and last meals of the day, you should be getting enough leucine in those meals to stimulate muscle protein synthesis. The lunch meal can be a smaller amount of protein.

      3.5 oz of chicken breast is 27 grams of protein and only 2 g of leucine, not 2.5. Having said that, I can't eat that much protein at once - especially since I'd want to incorporate veg and perhaps a small amount of carbs into my meal.

      @@debrahager2634 Yes, I know that, but he's basing that on a person who would probably need to eat 90-120 grams of protein a day- where I am a tiny person - and according to his website- and other info, I should be consuming 70-80 grams of protein (I'm just under 80 lbs) - and that should be fairly evenly distributed during the day in 3-4 meals. That would give me approximately 20-25 grams- and that won't get you 2.5 g of leucine. I'm just wondering if even a tiny person needs to get 2.5 grams a meal - I'd have to be consuming more than 1 gram of protein per pound of body weight.

      In another interview he interpreters intermittent fasting as fasting for more than 24 hours which he believes breaks down muscles too much and it’s too hard especially when you get older to build back muscle.
      He calls it time restricted eating, when you eat in a window of way 6 or 7 hours every 24 hours.

    hmm, very confusing messages Dr. Layman is communicating here.. so many things that he does not consider, like fats...OK, but what type of fats??... most Americans have excessive amounts (majority) of seed oils in their SAD diet which are highly inflammatory and cause metabolic disruption....not addressing that is just overlooking one HUGE issue....

    The 80-10-10 diet works because it is MOSTLY carbs. When carbs are mixed with lots of fats or protein in the same meal they act quite differently than carbs alone, but the keto people avoid this fact, like the fact that many people with diabetes get way way better eating High carb and low protein/fat. Both diets work depending on oes constitutional bent

    Mark you guest is an expert at jargoning, even you were overcome several times. I question his science partially because he is arrogant in his knowledge which is not conducive to the scientific method. An example is fasting longer than 12-13 hours, which he claimed caused gallstones so should be stopped, while ignoring two key factors which cause gallstones, speed of weight loss and diet.

      Humans require protein so you are not protein intolerant. You may not digest protein well. Try to increase protein slowly over a couple weeks to get your body to adjust and initially supplement with digestive enzymes with HCL.

      I think it’s because he believes the prolonged catabolism of fasting isn’t good. Also, when he delineates time restricted eating from intermittent fasting he’s really saying a prolonged fast. They didn’t really clarify that part so it’s confusing
