These look amazing! One of my default food prep items is shredded purple cabbage and carrots (sometimes kale as well). It’s easy to churn out in the food processor and is very versatile… i can use it as a slaw, add crunch to other dishes, or sautee it. Seems like it would fit well into this lineup. The book is beautiful, nice work!!

The best no-prep tofu comes from simply freezing it before you use it. I always have several blocks in the freezer, and I’ll take out one to defrost a day before I need it / when I’m running low. Unmatched texture without any pressing!!!
