I just figured out the majority of my chronic illnesses symptoms are most likely due to dairy intolerance. I love cheese so I am very sad. Went to the store yesterday and happened to see a big vegan cookbook and was like oh this will be perfect to help change my diet. I loved how the chapters broke everything down into detail to simply be a better cook in general, besides great looking vegan recipes. I didn’t know it was yours until I was reading at home and freaked out because I already had been following you on TH-cam for a while and was like omg rainbow plant life lol. Thank you for creating such a great book and giving hope to someone who thought giving up favorite foods for health would result in nothing but bland meals. Can’t wait to try everything in there! 🎉

Thank you for the amazing recipes; now that I got an iron pan, i'm excited to slow cook my beans in the oven! (I usually do a variation of the white bean soup but only on the stove, and with a generous squeeze of lemon at the end). I have a recipe that I'd like to share - from the time when I was working at a restaurant owned by a mexican and spanish couple. Black-bean leak soup: - 2 leaks - 1 big onion - A lot of garlic (I'd use half-to-one head) - 1 big can (~400g) of black beans (I'd use canned HOWEVER dry beans probably work best) - Cumin, salt, pepper and some spice of choice - Olive oil - Coriander (if you don't like it, you can omit) Cook the leaks, onion and garlic with a generous amount of olive oil, until golden. Add the black beans and cumin and add water (generous amount as well: 4 fingers above the beans). Season with a bit of salt, pepper, the spice of choice, and, the star of the show (for me), cumin. Let cook for as long as you can. I usually do 1h at low-medium heat. Blend everything until creamy and delicious. Taste and adjust the seasonings. Serve with a bit of olive oil and chopped coriander :) Hope you try and love this recipe as much as I do. It pairs beautifully with avocado toast (for a mexican feel!). Sofia

I've been making the corn stew for a few years, but I make it Southeast Asian with plenty of black pepper, herbs and vegan fish sauce & don't hide the tofu. In fact, I find corn & tofu to be a natural pairing.

One tweak I would like do to your recipe's is see how low i can go on the oil (The most caloric dense and fat packed item) .

Great warm cozy recipes, love soup season! Using pureed tofu for a soup base is pretty interesting, thanks for sharing that! I'll often just use butter squash with skin -- lots of nutrients there, as long as you wash the outsides before roasting.
Just made the squash soup with a few changes ( just added a few more veggies) it was wonderful! Never would have thought about the lentils on top, but it will now be a regular thing at our house they were a big hit! Will make more of your soup recipes over the next few months
I personally like to go full on 🎃 - fry the pumkin seeds, use pumpkin oil sparingly. Together with bread and fresh herbs 😋 I never used oven baked butternut, but will try it (to avoid cutting it raw). Soups are really great if you invest some time. 👍

@RainbowPlantLife Nisha, I make clean vegetable soups in my soup maker with neutral (onion and garlic) flavor profiles, and I found that adding your cashew cream makes them taste like "cream of _____" soup. Adding the cashew cream ingredients to the soup is ingenious. I'm going to make the broccoli soup today. Question: Is the corn chowder an Indian dish or one of your exquisite creations? Our big backyard garden was a bit of a failure in 2024, but we did have a lovely Pumpkin Patch, with about 20 pumpkins & 20 Butternut Squash. We have 4 of each left (mid-Jan).

I have a recipe that I'd like to share - from the time when I was working at a restaurant owned by a mexican and spanish couple.

@RainbowPlantLife Nisha, I make clean vegetable soups in my soup maker with neutral (onion and garlic) flavor profiles, and I found that adding your cashew cream makes them taste like "cream of _____" soup. Adding the cashew cream ingredients to the soup is ingenious. I'm going to make the broccoli soup today. Question: Is the corn chowder an Indian dish or one of your exquisite creations? Trying that next. Love your videos. Thank you❣

Our big backyard garden was a bit of a failure in 2024, but we did have a lovely Pumpkin Patch, with about 20 pumpkins & 20 Butternut Squash. We have 4 of each left (mid-Jan).
All the sous look amazing! As I got older I started roasting squash whole and peeling after because cutting them raw was no longer fun.
