  • Asante local soups are characterized by the usage of a lot dry ingredients as well as fresh ones ( usually the vegetables known in twi as Atosodeɛ)
    The proteins used are usually dried fish of different types, dried snails, mushrooms etc. Drying is a big preservative method in the Asante culture for several reasons. Salted fish and beef is also used a lot .
    One of the major things that stood out to me during this cooking process @ikesvillage was the minimal use of any kind of spices. The only thing used was salt and that is what has originally being used by our ancestors.
    Spices in Asante cooking is a modern way of cooking. Even with that, very little spice is used in many of the Asante cuisines I know.
    This soup was so flavorful, great aroma and tasted just as great. For content purposes it stayed on the fire for a bit too long and there was a lot of stirring too so some of the fish ended up broken in the process.
    Light soup is a very common type of soup in Ghana. However, we talk about authentic Asante Nkwan, this is how it is made.
    Funny enough I hated this type of soup as a child because I felt it had no meat in there 🤣🤣. Jokes on me now
