TIP: My Mom was a Champion Dumpling Maker! Spoon dumplings (aka Drop Dumplings) were her thing. I must have been the only kid in the neighbourhood who thought stew/soup was gourmet cuisine… just because of her dumplings. My Mom always said that the secret to making light and fluffy dumplings is to have the soup/stew REALLY HOT, and also NO PEEKING! When you lift the lid to peek at your cloud-like dumplings, you are letting all the heat and steam escape, and this means the dumplings won’t cook properly. Peeking results in dumplings that are gooey, and they will most likely not be those fluffy dreamy clouds of deliciousness that we all love. Great video Immy… thanks for the Autumn kitchen inspo. 🌎💦Ⓜ️ary🍁. PS - soup with dumplings pairs nicely with 🍷 (I’m no sommelier… I just know what I like 😃.)
@maroxa I don’t think dumplings can be over-cooked (within reason ofc) but they can certainly be undercooked. My Mom would get the pot of stew/soup piping hot, then drop the dumpling dough off the big metal spoon and onto the surface of the hot liquid. (Her dumplings were not shaped by hand like Immy’s are, but it’s the same technique.). My Mom would then cover and simmer for 15 minutes with, as you know… no peeking or lifting the lid. They always turned out perfectly… and I’ve had success with this technique too. I hope this is helpful. Happy Dumplings to you!! Ⓜ️ary🍁
Just an advice: celery is very stringy and it's wise to chop it quite small (like Immy did) before putting it in the food processor, cos the strings could wrap around the spinning part, slowing it down and sometimes making it burn with the effort 🙂 Sadly it happened at home and to the professional blender in the kitchen where I went to work (before I got there!) 😅
That's so interesting that you associate sage with lamb dishes. Just shows how herbs differ from country to country, region to region. Here in Canada sage is almost always paired with poultry dishes like turkey, or with pork. I use it whenever I want my tofu or seitan to be a substitute for those things. That mushroom soup looks delicious.
Hello fellow Canuck… I was thinking the same thought exactly… here in 🇨🇦 sage is associated with turkey/poultry. Like you, we are plant-based so no turkey for us this Thanksgiving. We had a delicious tempeh dish with coleslaw and roasted sweet potatoes which used up lots of veggies from our garden harvest. I thought of this too, but I associate sage with pasta (gnocchi) and browned butter! It's a dish that I miss as a vegan, vegan butter doesn't quite do the trick

I love sage cooked with pumpkin or squash, new york times has a delicious squash and kale savory pie with sage; also home-made yam or sweet potato gnocchi is delicious when served with truffle oil fried crispy sage leaves.
@@SustainablyVegan gnocchi with sweet potato are easier than potato because when you steam or bake them they mash completely with a fork, then add flour until you get a dough, roll into ropes, cut and boil. They freeze really well too.

Hi! I don't know if you're aware but chestnut mushrooms, white mushrooms, portobello mushrooms etc. (all different stages of growth of the same type of mushroom) are only grown on peat which has a really big negative environmental impact. If you find a good source of them grown peat-free then I'd love to know!!
Loving your kitchen! Miss cooking on an aga, but my slow cooker helps a little. Always cook from scratch myself, but looking to include some more plant based dishes (was veggie for 4 years, then hit with dairy allergy, but found veganism to hard when living out of hotels during the working week).
I don't have a freezer at uni or I'd defo make a massive lasagne this looks amazing!! personally i don't think there's much point putting vegan cheese in sauce cause it just melts away, but i love it sprinkled on the top like you have it :)

Food processors are life savers and time savers too! I don't know why I gave that impression haha they are really great and I think they're the only piece of kitchen equipment that I would recommend to anyone!

Really want to try your lasagne recipe and that soup looked so good - I've never frozen dumplings before so I'm going to try that! Do you have a chest freezer Immy? If not a word of caution. I find those glass containers too heavy to go in the drawers of an upright. It's how I killed my last freezer - they ended up cutting right into the moulded runners so i was unable to open the drawers!!

It's really just vegetable oil and wheat flour, so you could mix the two together to get a crumbly chunky texture and use that. I might give this a go first to see if it actually works!

You should consider an immersion blender for soups and sauces. It is so much faster and saves you pouring back and forth into different containers.
I was gonna recommend the same thing! It is an essential for soups and purées.

a big tip if you freeze your meals put gladwrap on the top before you put the lid because that will stop the freezer cristals thats not a nice taste

Walnuts are absolutely not necessary!! You can omit completely 💖
sunflower seeds are also cool meat alternative (idk if you can be allergic to those)

I was thinking I’ll use coconut oil, maybe chilled then blitzed into small pieces in the food processor
It's really just vegetable oil and wheat flour, so you could mix the two together to get a crumbly chunky texture and use that. I might give this a go first to see if it actually works!
