Hey everyone! I would like to make it clear that the term 'lazy' is for the youtube algorithm, and these meals were 'more labour intensive' than a v lazy meal because... that wouldn't be interesting to watch. Yes, for me a very lazy meal means getting something out of the freezer or having a couple pieces of toast and a banana... but I doubt that would be very interesting to watch. So please take this video with a pinch of salt, as it is a product of how the platform forces to create content. This is also a look at the 'kinds' of meals I'm able to make because of course I make my own schedule. When I had a full time job and was creating youtube videos on the weekends or before work, my meals still looked similar.

I know that the use of the word lazy to describe these lovely colourful meals was completely well-intentioned, but I do hope people watching this will realise that this is NOT how lazy looks like for an average person (let alone someone in a full-time office job, parents, anyone struggling with depression, fatigue...). Please do NOT feel bad about yourself if your idea of lazy is a ready meal or a slice of bread with hummus. Again, this is NOT meant as a criticism of Immy or her video which is absolutely wonderful, but I do wish that the massive privilege needed to consider these meals 'lazy' was pointed out.
You're right I should have mentioned that I have a lot of time privilege here and I'm sorry I didn't. I also tried to make this video more visually interesting by assembling meals rather than showing my SUPER efficient toast and a banana. I will make this clearer next time! I Absolutely Adore that you demonstrate eating leftovers!!! When my children were young I would have built in “leftovers” nights when meal planning-I would empty out the fridge of its containers & ask each child what they wanted on his/her plate. They would come up with combinations of foods I never would have thought of. We each loved it! & it gave me ideas on how to serve certain foods in new ways. Win-Win! Thank You for another great video🙏
This high school sewing teacher (🇨🇦) likes to occasionally bring two lunches/snacks to school to share with a colleague (cuz I believe that the greatest way to create happiness for oneself is to create happiness for others). I recently made some black bean chilli and had a lot of black bean broth left . Sauteing whole cummin seeds and tomato paste with some cacao powder in olive oil. Adding small dices of what ever vegetables into the pot. Also added small glass of coffee, leftover spicy pickle juices, and the black broth with spices. OMG it was so good. It's a pick me up broth. Love how you use up your stuff in the fridge. Thanks again....
some might say these are not exciting meals, but those who know how satisfying it is to actually eat all your garden veggies, or use up what you have, find them amazing!!

End of the week-fridge-cleanout couscous salad is just the best! Or, sometimes we make lentil patties and stuff them with left over carrot, bell peppers or other crunchy veg in the batter. Or Letscho- basically hungarian ratatouille with more tomato sauce and onions. To be honest, I'd eat the pickles as are ;)
Hi Astrid j.f. I just discovered the joys of homemade ratatouille last weekend. I’m not a fan of eggplant so I substituted tofu instead. I love that ratatouille is a versatile dish and it uses up lots of veg from our garden especially zucchini. Like you, I also love lentil patties. Have a great upcoming weekend.

I love "bottom of the fridge" meals. I remember growing up my mom would almost weekly make random veggie soup with the veg that needed to be used up. Sometimes brothy and sometimes creamy but always good. Also, I am glad I am not alone in my making of bizarre, random bowls. As long as I have a tahini dressing, i can add anything to the bowl and find it yummy.
Some lovely simple recipes here I really want to try especially the lentil soup (but I have green lentils) and can’t wait for the mushroom soup/stew in the next video.
That lentil recipe is really close to how I prepare lentils/lentil soup! I’m Colombian and usually beans or lentils are served alongside rice as a side with meat but also commonly eaten just together as a soup with rice on the side. The recipe is very similar it’s onions, garlic, and cumin cooked with lentils (we use green lentils) and you can add coconut milk if you like as well for the soup or add in green peppers if you like :D
You should try raw courgettes in your salad, I just use a peeler to get them super thin and long. Tastes surprisingly yummy! Really enjoyed your recipes! x
I make a similar Red Lentil soup often. It’s cheap, quick, easy, filling, nutritious, & you can vary the flavors simply by changing the dry seasoning...sooo good 🖖🏻😎🥳🤩

I basically have predictably one of the three ‘S’s for lunch: salads, soups or sandwiches and save the whammies for supper. So, now Im wondering if your lunches are your main meals and what kind of meal you eat in the evenings?

I love kimchii fried rice, kimchii soup, miso soup (being Asian, well...). But reading that heat killing the active bacteria (probiotics) in fermented food, I've had this debating mixed feelings every time I cook my kimchii & miso dishes now... Idk if anyone shares the feels...
As a new vegetarian, I recently tried to make a red lentil dal, and LET ME TELL YOU that rinsing or soaking is ABSOLUTELY necessary. I don't have a mesh strainer and I put very little effort into trying to soak the lentils before cooking them up cuz I didn't think it was needed and I am FEELING IT. My body hates me. Don't be like me. Rinse. The. Lentils.

fold the bottom up first to secure the bottom part of the wrap so nothing falls out, then each side over. It's perfect!! haha
