Since you asked!..... I got interested in your freezer meals mostly for the creative Vegan one pot recipes but the efficiency is definitely intriguing! As an empty nester and recent widow it’s been hard to cook soups and casseroles for one and I got tired of eating the leftovers. So I started freezing in one serving portions so as to not waste food and I could rotate the meals. The added bonus is less frequent cooking and cleanup! I recently acquired a giveaway crockpot and my next goal is to get a small upright freezer. Your freezer meals have inspired me to want to batch cook and prep ahead more! Thx!

I would love to try but I’m 81, widowed, and need to stretch my limited income for housing essentials, auto expense, etc. But I will be trying the recipes you gave me. Thank you.
If g know where you live but my local West Australian “Spudshed” usually has use by tomorrow 300 gram blocks of tofu for $1.50 rather than $5 from the health food store. I often cut a block into four of 75 grams, use one block in a stirfry (marinade needed), use one block the next day replacing banana in a smoothie and freeze the other two pieces for the next week. I haven’t tried yom yum paste though… just soy garlic and honey so Tom yum is next up!
My husband in on a low carb diet. Is there something I can replace the corn with in your corn chowder soup? Of course it would no longer be corn chowder, but perhaps the items in the soup would combine nicely with an alternative ?? Thanks!

The cook times will remain the same. You can cook one meal now and the other up to 90 days after the prep date. I would also recommend to sign up for a FreezerFit membership! Not everyone has a crockpot or pressure cooker. There are exactly two meals that have cooking instructions for a method that doesn't require a special appliance. That's very disappointing.
All of these meals in the class and inside the membership can be cooked in the stovetop. So simple and easy, just thaw the freezer meal before cooking. Definitely not disappointing :) try them and let me know. Love, Susy ❤️
That is true however I find a cockpot indispensable for stock, soups, casseroles, black rice pudding, bone broth etc etc. They cost around $30 new and can often be seen in thrift stores that sell electrical goods(tested) for much less. I encourage you to get one!
@@vivienbeere4778 Slow cookers may do those things, but other cooking methods tend to do them better. I've had a slow cooker before and didn't find it worth the space in my my kitchen.

So the veg just go in fresh and raw don’t have to be blanched or anything?
You can blanche them if you like. We have tested the recipes without the blanch process and they turned out great!!
It was quick but how long did the prep take? The prep is time consuming!

It takes me about 15 minutes to slice all the vegetables. To get the whole class ready, it takes me about 30 minutes total. Hope that helps!
