Spice Cake with Just the Right Amount of Spice

  • My super simple spice cake recipe is full of fall spices and covered with a silky cream cheese frosting. It comes together in just one hour in ONE BOWL!

    Ingredients
    2 2/3 cups all-purpose flour (335g)
    1 ½ cups dark brown sugar, firmly packed (300g)
    ½ cup granulated sugar (100g)
    1 ½ teaspoons baking powder
    ½ teaspoon baking soda
    1 teaspoon salt
    2 ½ teaspoon ground cinnamon
    1 teaspoon ground ginger
    ¾ teaspoon allspice
    ¾ teaspoon ground cloves
    ¼ teaspoon ground nutmeg
    12 Tablespoons unsalted butter, melted (177g)
    ½ cup canola or vegetable oil (118ml)
    3 large eggs, room temperature preferred
    1 Tablespoon vanilla extract
    1 cup sour cream (8 oz/240g)
    ¼ cup whole milk (60ml)
    Cream Cheese Icing
    8 oz cream cheese, softened (225g) (use brick-style, not the kind sold in tubs)
    ½ cup unsalted butter, softened (113g)
    3 ½ cups powdered sugar (440g)
    1 teaspoon vanilla extract
    ¼ teaspoon salt

    Instructions
    00:00 Introduction
    00:45 Preheat oven to 350F (175C) and grease a baking pan with baking spray (you may use a 13x9 pan or two 9” round or 8” round pans, if using round cake pans it’s best to line the bottoms with parchment paper, too). Set aside.
    00:49 In a large mixing bowl, whisk together flour, sugars, baking powder, baking soda, salt, and spices (cinnamon, ginger, allspice, cloves, & nutmeg) until well-combined.
    02:24 Add melted butter and oil and stir well until combined.
    03:59 Using an electric mixer, add eggs and vanilla and stir until completely combined.
    04:51 Stir in sour cream and then milk. Scrape the sides and bottom of the bowl to ensure batter is smooth and uniform.
    05:40 Pour batter into prepared pan (or evenly divide into round cake pans). Transfer to center rack of 350F (175C) oven and bake for 30-35 minutes for metal 13x9 pan (will take longer if using a glass pan) or for 9” round pans, or 35 minutes in 8” cake pans. When finished baking, the cake should spring back when lightly touched and a toothpick inserted in the center should come out clean or with a few moist crumbs.
    If using a 13x9 pan: Let cake cool completely before icing directly in the pan.
    07:23 If using round cake pans/making a layer cake: Allow cakes to cool for 15 minutes then carefully invert onto a cooling rack to cool completely. Cakes will likely be domed and, if so, should be leveled before assembly. Cake must be cooled completely before icing.
    Icing
    Combine cream cheese and butter in large bowl and use an electric mixer (or stand mixer) to beat until creamy and smooth.
    With mixer on low-speed, gradually add powdered sugar until completely combined.
    Stir in vanilla extract and salt.
    08:09 Spread evenly over cooled cake.
    Notes
    Storing
    Store in an airtight container at room temperature for up to 48 hours or in the refrigerator for up to 5 days. Cake may also be tightly wrapped and frozen for several months.
    Cupcakes
    This recipe can be made as cupcakes, fill liners ⅔ of the way full and bake for approximately 17-18 minutes or until a toothpick inserted in the center comes out clean or with moist crumbs. Will make approximately 30 cupcakes.

    Sam, this cake recipe is phenomenal! I followed your spice cake recipe and brown butter cream cheese frosting recipe for the cake I was bringing to a holiday dinner. I baked two layers but kept them separate to leave one cake at home and take one to the party. The cake at the party was devoured within minutes! Every person I brought a slice to for a sample was raving about it.
    This cake is moist, soft, fluffy, and flavorful. Just the right amount of spice, and the brown butter cream cheese frosting was perfectly complimentary. The crumb was tighter than I’m used to for cake but the texture when you take a bite is perfect. That reverse creaming method really is effective. The cake was so popular with friends and family that I’ve been asked to make it again. So that’s what I shall be doing, baking the same cake two weeks later because it’s just that damn good.

    My grandson (12 yrs) and I made this for hubby's Bday. WOW it was such a success It was 2 layers. Middle was pastry cream Even tho I had no Ginger to add to the spice mix, the family LOVED IT!!! Thank you for another wonderful recipe

    I made your banana bread recipe yesterday and it so good it should be against the law, moist , sweet . My sister said take a piece and put a little pad of butter on it and heat around 20 seconds. It should be called the sinners banana bread, you will keep going back to it. Thank you ,rotting bananas never tasted so good. Spice cake is next.

    Made my cake in a 13×9 pan and it looks marvelous! After it cools thinking of your wonderful frosting with some of the spices; not to much just a bit.

    I know your spice cake doesn't include raisins, (and believe me I am not a huge fan of raisins), but for years I have been trying to mimic a spice square recipe my mother use to buy from a company called Leo's Pastries distributed to stores here in Northeast New England. I have tried without success to even discover who even owned Leo's Pastries, but they were in a package of about 6-9 squares, of yummy dark spice cake with raisins, but they had chocolate frosting on them, topped with a (I'm going to say a white chocolate flower with pink petals and green leaves on top.) They were the best. I am going to try your spice cake recipe with a few raisins thrown in for good measure, and try maybe your chocolate frosting recipe, and I will take a chance with some sort of white chocolate flower. I love your recipes and they are so moist!

    Any chance you have recipes for spaghetti sauce, pizza sauce, chocolate pudding, vanilla pudding, apple cider (without alcohol.. just really love a hot cup of apple cider when it's cold outside), French onion dip and any spice seasoning mixes.
    Sorry I'm asking for a lot, I've literally been writing down all the recipes I enjoy making around my house and have shared a lot of your videos but thought I'd finally ask for a few things I don't have recipes for... tried some others but they weren't good and so far everything I've made of yours is absolutely delicious! My entire family really love the ice oatmeal cookies... so good!

      Hmmm that sounds interesting. I have actually never used cinnamon extract so I'm not sure how it behaves. I'm not sure if it's really potent or not. It could be worth experimenting with. :)

    Watched one of your videos where you said if the oven isn't big enough to accommodate,say 3 baking pans,then it's possible to leave one on the counter and bake after the other two. My question is,the one that's left,does it bake properly? Doesn't it have any problems rising? Plz help

      I have never had a problem with it rising. It doesn't end up sitting that long. If you were to leave it there for a few hours you may run into an issue. The only difference is that it may need a minute or two less in the oven since it's only one cake. :)

    If I can't get dark brown sugar, can I use all light brown sugar, rather than dark brown sugar and granulated sugar? It's a question of availability.

      just remove the cream cheese from the recipe, and add less sugar

      My Brown butter frosting or even my whipped cream frosting would be other great choices (and I’ve been wanting to try my new caramel frosting on it, too!). White chocolate frosting might even work, too! I’ll leave some links below.

      @@HaliaStone You can usually use any cake batter to make cupcakes, just give them less time than a regular cake. Which is why I laugh when I see "cupcake mix" sold as a different article.

      @@HaliaStone Sam gives a recipe for "spice cupcakes". I haven't checked, but I think the proportions for the spice cake and the spice cupcakes are the same; also, the ingredients.

    I made a full receipt into mini muffins (it will make 8 dozen) and took them to church. We have a small church and i figured i would take a couple dozen home . WRONG!!! They were all gone before services started!!!
