This cake is perfect. The pineapple and sour cream is ingenious. I recently made this cake and wow! Let the sponges cool overnight, brush with a simple syrup then a thin layer of caramel and then add the cream cheese icing in between each layer - it enhances an already perfect recipe. I made the recipe exactly as directed and it was perfect. It will become a firm family favourite.

I noticed your baked batter is much lighter than mine usually is. Charlie, if ever you feel a need to
switch up this recipe, you can add raisins and/or chopped nuts to the batter. Again, looks great!
