    Ingredients
    2 1/2 cups all-purpose flour 315g
    1 1/2 cups dark brown sugar, firmly packed 300g
    1/2 cup granulated sugar 100g
    1 1/2 teaspoons baking soda
    1 teaspoon baking powder
    1 teaspoon salt
    2 1/2 teaspoons ground cinnamon
    1 1/2 teaspoons ground ginger
    3/4 teaspoons ground allspice
    1/2 teaspoon ground cloves
    1/4 teaspoon ground nutmeg
    1 cup canola or vegetable oil 235ml
    1/2 cup unsalted butter melted (113g)
    4 large eggs room temperature preferred
    1 Tablespoon vanilla extract
    1/4 cup buttermilk ¹ 60ml
    CREAM CHEESE FROSTING
    8 oz cream cheese softened (225g)
    ½ cup unsalted butter softened (113g)
    1 teaspoon vanilla extract
    ½ teaspoon salt
    3 1/2 cups powdered sugar 440g

    Instructions
    00:00 Introduction
    SPICE CAKE
    00:28 Preheat oven to 350F (175C) and grease and flour a 9x13 baking dish (or spray with baking spray). Set aside.
    00:33 In a large bowl, whisk together flour, sugars (granulated and brown), baking powder, baking soda, salt, and spices (cinnamon, ginger, allspice, cloves, and nutmeg).
    01:40 Add canola oil and melted butter and stir well. The batter will be pretty thick at this point, that is OK, but using an electric or stand mixer will make it easier to combine everything.
    02:16 Add eggs, one at a time, stirring well after each addition.
    02:46 Add vanilla extract and buttermilk and stir until ingredients are well-combined.
    03:28 Pour batter into prepared baking dish and bake on 350F (175C) for 40 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
    04:13 Allow to cool completely before topping with cream cheese frosting.
    CREAM CHEESE FROSTING
    04:32 Combine cream cheese and butter in the bowl of a stand mixer or in a large bowl and use an electric mixer to beat until creamy and well-combined. Stir in salt and vanilla extract.
    04:53 Gradually, with mixer on low-speed, stir in powdered sugar until completely combined.
    Spread evenly over cooled spice cake.

      It will make enough for 2 8" round cake pans. They should take about 35 minutes to bake. :)

    Looks delicious and I’m going to give it a try. Do you think two 8” foil pans would work? If so, would I need to adjust temp and/or baking time? Thanks so much for your input and for your wonderful instruction videos.

      It should work in 8” pans, but foil is typically pretty shallow. You would need a traditional 2 inch deep pan or you will have a lot of left over batter. The temperature would remain the same regardless of what pan you are using though. 😊

      Honestly I’m a chocolate kind of person so it’s probably just a chocolate cake for me, or a vanilla cake with a nice chocolate frosting. 😊

    Could I use yogurt instead of buttermilk? It's sometimes hard to measure 1/4 cup.

    Looks delicious! I do have a question on the frosting. A stick of salted butter has 1/8 tsp in salt. You add a stick of unsalted butter and 1/4 tsp of salt. Why not just use the salted butter and either add in the other 1/8 tsp, or just go with a bit less salt?

      Using unsalted butter just gives you better control of the amount of salt in the recipe so I always use unsalted.

    Beautiful recipe! What would be the baking temp and time if made as cupcakes?

      This cake has a tendency to sink when made as cupcakes. Unfortunately it’s just the nature of this cake. I have been working on a cupcake version, but I don’t quite have it perfected. You can always try it and see how they turn out for you (some people have had success), or you could make my gingerbread cupcakes, which are similar! 😊

      A little bit of sinking is normal with this cake. If it sank a lot, it may have needed a little more time in the oven 😊

      You could substitute butter for the oil, but for best results I really recommend the oil.

      Using unsalted butter really helps you control the flavor so I definitely prefer it. Just make sure to reduce the salt if you use salted butter. :)

    Just made this tonight. Was disappointed with how dry and crumbly it came out considering it has so much oil, butter, eggs and even buttermilk! My guess is that it has too much flour for a cake. If flour was reduced it would probably be less bread like.

      I’m so sorry this happened! There are a few things that can cause this. Over mixing the batter, over baking the cake or too much flour. If you don’t weigh your ingredients I would recommend checking out my post on how to measure flour. I hope you’ll give it another try! 😊😊

    Measurements for the chemical leaveners are far too much. My cake overflowed and then caved in right in the center! I Used 1/2 tsp of baking soda & powder and it came out perfect ( the second time).

    Time to check expiration dates on Spices, and if they are more than 18 months old, buy the ones you know you will be using soon.
    They won't be as tasty if they're over 2 or 3 years old.

      @@SugarSpunRun this gives me an excuse to go buy more spices! I thought i had every spice, but i don't (because i haven't baked desserts in ( (rarely)Years), and as much as i wanted to have all spices on hand, I didn't want them to be Out-of-date by the time i needed them.
      Sometimes i wish i was raised up on Indian Cuisine, because spices are so healthy and the flavors make life more (sorry)**🤧cough cough* SPICY...i know, eyes are rollin'!! 🙄👀👁️💞
