- You'll love this wonderfully moist, perfectly spiced Carrot Cake Recipe. This cake is surprisingly simple to make and includes a step-by-step video for no-fail results every time. Top everything off with a simple cream cheese frosting for what truly might be the perfect cake.

Ingredients
2 ½ cups all-purpose flour (315g)
1 cup granulated sugar (200g)
1 cup light or dark brown sugar* tightly packed (200g)
1 ½ teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
½ teaspoon nutmeg
1 cup canola or vegetable oil (235ml)
½ cup or 1 stick unsalted butter melted (113g)
4 large eggs room temperature
1 Tablespoon vanilla extract
3 cups grated carrots** (340g)
1 cup chopped walnuts or pecans optional (125g)
Cream Cheese Frosting***
½ cup (1 stick) unsalted butter softened (113g)
8 oz cream cheese softened (brick-style, not spreadable) (226g)
1 teaspoon vanilla extract
¼ teaspoon salt
4 cups powdered sugar (500g)
Instructions
00:23 Preheat oven to 350F (175C) and prepare two 8-inch pans**** by lining the bottoms with parchment paper and lightly greasing and flouring the sides.
00:27 In a large bowl, whisk together your flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
01:17 Add your canola oil and melted butter and stir well (batter will be pretty stiff and thick at this point, I usually use an electric mixer or my stand mixer to combine everything nicely).
01:55 Add eggs, one at a time, stirring well after each addition.
02:18 Stir in vanilla extract.
02:33 Stir in carrots and nuts (if using) until ingredients are well-combined.
03:15 Evenly divide carrot cake batter into prepared baking pans and bake on 350F (175C) for 40 minutes (toothpick inserted in center should come out mostly clean with only few moist crumbs).
04:11 Allow carrot cake to cool in the pans for 10 minutes, then run a knife around the edge and invert onto cooling rack to cool completely.
04:33 Allow cake to cool completely before covering with cream cheese frosting.
Cream Cheese Frosting
04:49 Combine butter and cream cheese in a large bowl and use an electric mixer to beat until creamy, well-combined, and lump-free.
05:07 Add vanilla extract and sprinkle salt into the bowl and stir well to combine.
05:19 With mixer on low, gradually add powdered sugar until ingredients are completely combined (be sure to scrape the sides and bottom of the bowl with a spatula).
05:38 Once your cake has cooled completely, cover with frosting.
Notes
*Either light or dark brown sugar will work fine, dark brown sugar will make your cake slightly more moist and rich, but light brown sugar works perfectly if you don't have dark on hand.
**For me, this usually requires about 4 large carrots. I always peel my carrots before grating. Make sure to use the small shred of your box grater. Another way I like to prepare my carrots is to use the "shred" setting on my food processor and then switch to the blade and briefly pulse the carrots so that you have fine pieces of carrot (don't over-do it though, or you'll have carrot juice!). Whatever you do, don't use store-bought "matchstick" carrots, they're not nearly thin enough!
***A single batch of my cream cheese frosting recipe will cover this cake, but because I like a lot of frosting and will usually pipe decoration on the top of the cake, I generally increase the recipe by 50% or even double it.
****You can use 9" cake pans instead, but the carrot cake will need to bake for less time, likely around 30-35 minutes.

I used this recipe to make my mother’s wedding cake.. OMG! I made enough to feed about 50 people and the joy that recipe brought to her big day was just so joyous to my heart. I’m an avid baker and cake decorator (just small scale) but I’m always looking for a great new cake recipe and I do NOT like carrot cake at all but since I’ve made this and so many tried it, I’ve been asked for more. I'm not much a decorator, but I normally like to keep it pretty simple. I will use an Ateco 848 tip for some swirls around the edges and then top those with some green and orange sprinkles. :)

It's 2 days before Easter and the kids have asked me to bake them your carrot cake! How do you say no to that? Do you think I could make this a day in advance or would it be better to just bake it early in the day, giving it plenty of time to cool off. lol

I went back to Outback Steakhouse to work. I had a different job before the pandemic and never thought I would work in restaurants again. They pay me a higher wage then normal since I worked there before. I got really depressed before I started working again but now I have a job again I’m really happy again. I actually got my laundry done and started eating regularly again. I was just laying there all day long before I went back to work

I walked out of there and told the table that there was roaches in the kitchen before I quit…. Since then I have worked at a slaughter house where I spent all my time cutting off chickens heads about 150 000 a day. They are so over staffed that I maybe got 14 hours a week. I didn’t have enough gas to go back and they kept sending new people home early knowing they wouldnt provide enough so I drove through there grass the company had a strict no grass walking policy so I just peeeled out in it. Now I work at a gas station in the ghetto, I spend my time dealing with crack heads and cleaning up used syringes and syringe caps from the laundry mat …. Struggling to make enough money to eat more or less pay my bills, I have a interview at a furniture store today … and I’m trying to get approved for the workforce innovation and oppurtunity act program to get my cdl…. Life sucks right now

Melted butter will work here. You will want to use a 1 to 1 substitution. :)

update it turned out good however even tho my cake was baking on the lower middle shelf. The top of the cake was more done than the bottom sadlly.

Yes! It will need to bake for approximately 45-50 minutes.
Can it be possible to lessen the powdered sugar on the cream cheese and butter frostings?
You could but your frostings won’t be quite as firm and won’t hold their shape quite as well

A 10 inch pan will work but your layers will be a bit thinner and your bake time will be reduced. 😊

This will work in a 10 x 14. You would likely need a small increase in the batter, probably about 25%, but I haven't done it myself to say for sure. Make sure you don't overfill your pan. :)

It wont hold all of the batter so as long as you don’t overfill it that will be fine. I’m not sure what a bake time will be. 😊

Going to use this recipe but instead of carrots I'll use zucchini.
This was a hell of a lot of work and I used an oven thermometer. I was cautious and set the timer for 30 minutes and they were so burned as to be inedible. Thanks a lot "EXPERT". 25 minutes may have been over done. Ask me if I'm happy!!!!!
That’s very frustrating, but also extremely odd. These cakes have never baked in less than 40 minutes in my own (temperature monitored) oven, nor has anyone else (in nearly 500 comments) mentioned the bake time being an issue or having their cakes burn. Did you make any substitutions or use different bake pans or bake on a different rack than the center? I’d be happy to help troubleshoot, but this is not a known issue and I do continue to stand by the recipe as written.

Carol, I have been on a low carb diet many many times, but I wouldn’t look at a cake recipe when I was. Don’t talk to me about diets. Everyone should know, there isn’t a cake in their diet, unless you buy the processed carb food out there

OMG, I use the same recipe for frosting as far as butter and cream cheese goes and only one cup of powder sugar and it's already plenty sweet enough. Can't imagine adding 3 more cups. Yikes.

I got to my cousins place and she was really sick. So I left the cake for her and didn't even have a piece! She was the one who had asked for the cake. 🤷♂
