I do it so I can cover the entire cake with more cherry bites and also I feel they lay better when they are flat on one side, but this is definitely not something you have to do. Thanks for the question!!
I try my best to mix it up, but I film from my cell phone and it's not always easy to show what's going on inside the bowl. That's why I list the ingredients and thoroughly explain what I'm doing. Maybe try Brenda Gantt. You may be able to see the process a little better.
