Love anything with pineapple in it. Love pineapple sandwiches. I grew up in GA until I got married. A lot of the church functions had pineapple sandwiches. And banana sandwiches. That pound cake looks incredible.

I got out my Collard Valley Cookbook and found the pound cake recipe. So I added in pen the changes on how to make this a Pineapple Cake. You are a very good cook and the look of your cake made my mouth water. I doubt I can make my cake as tasty as yours, but I’m going to follow your recipe and try!!

Looks scrumptious! Can it be baked in an 18 cup pound cake pan? If so, are the baking instructions the same? Starting on 350 degrees then lowering to 325 degrees for the duration? I’ve not been successful in baking a Pineapple Poundcake, seems too moist. I’ll try it your way and see what happens. As always, thank you for sharing!!!
I don't think I would caramelize it before adding it to the cake but that is totally up to you. I mean people can add preserves to a cake so I would think it would work and it may taste good

I noticed the canned pineapple "magically" appeared on the grocery list so will be making this in the next day or two. Speaking of the generous amount of batter your cake recipes make, we've always found there was enough extra to make a smaller cake to share with neighbors who appreciate & enjoy your recipes as much as we do! I wish I wasn’t allergic to pineapple but I’m definitely still making it for my husband just moving a little bit of the batter away for me before I add the pineapple it came out of the pan so pretty adding a glaze would have ruined it

I love the way this one that you used, you can just put the ingredients straight into the bowl, plus the fact that it's light weight, I will be able to lift it!! Yeah!!
