  • Recipe here: www.joyofbakin... Stephanie Jaworski of Joyofbaking.com demonstrates how to make a Pineapple Upside Down Cake. This Pineapple Upside Down Cake is a throwback to the 1920s. A time when canned pineapple was all the rage. One look at this cake and you can see why it was so popular. It is lovely, with its glistening slices of sweet and sticky caramelized pineapple sitting happily on top of a fluffy white butter cake. A Pineapple Upside Down Cake begs to be served warm from the oven, with or without a dollop of softly whipped cream.
An older version of this video using fresh pineapple is here: • Pineapple Upside Down ...

Great recipe! I used cake strips around my cake pan so it bakes evenly. After baking for 45 minutes the middle was not baked enough, so I lowered the oven to about 300-325, put aluminum foil over the top of the cake-checking it every 5 minutes. My cake came out perfectly

I see you’re updating a lot of recipes from a while ago. I love it. I made this cake every year for my mom’s work. One of her boss’ loved it and it just became a thing I did (for boss’ day). She is now retired and every time I make it we talk about all the years this cake has seen. It’s our summer tradition now. Thank you.

I've been thinking for a couple years now how to update this cake. My mom used to make it all the time when I was a kid. My idea is a coconut cake. Make a single layer coconut cake.
Then, do the topping which would be like making Cherries Jubilee, with pineapple. But before I would put a piece of the cake on the plate I would put on some spiced Creme Anglaise.
That's my idea. I let you know how it turns out.
I think it would be a good dessert after a very spicy dinner such as real Texas chili, or BBQ, or Indian or Thai dinner. Especially with the coconut tie-in.

Yummy! I love your recipes. I use an iron skillet for mine most of the time because my grandma did. I also used pineapple juice for my liquid in my batter. Sometimes I’d use pecans in place of 🍒. The iron skillet would almost candy the pineapple and make a crunchy caramel…I’ve even used muffin tins. Definitely a classic! Thank you.

My grandmother and my mother (and in turn, myself) would sprinkle about 1/4 cup of finely ground pecans on top of the brown sugar mixture before placing the pineapple. It gives a deep, rich flavor - like the candied walnuts at Xmas time.

My grandmother told me about back in the 30's and 40's, there was one specific time of year when they could get shipments of fresh pineapples, you ordered them by the case, and then you'd can them at home (and eat them fresh as well)
