    Pongal festival also known as Tai Pongal is a Hindu harvest festival in South India Tamil Nadu. Tai Pongal is celebrated to thank Sun God for agricultural abundance.
    Ven Pongal recipe is cooked during Pongal festival in the South Indian States such as Tamil Nadu, Karnataka, and Andhra Pradesh. This recipe is a south Indian ghee khichdi made from clarified butter, which consists of tempering. It is also a common breakfast recipe.
    Try this tasty and spicy Ven Pongal or Pongal recipe at home this Pongal festival.
    Ingredients:
    - 1 cup Split Moong Dal
    - 1 cup Rice
    - Water
    - 4 cups Water
    - 1 tsp Ginger (chopped)
    - 2 Green Chillies
    - Salt
    - 1/4 tsp Turmeric Powder
    - 2 tbsp Ghee
    - 20-25 Cashew Nuts
    - 1 tbsp Cumin Seeds
    - 1 tbsp Black Pepper Corns
    - 1/4 tsp Asafoetida

      In the USA, fresh curry leaves are nearly impossible to find, at least where I live (very rural, north). In your opinion, is there a desireable substitute for those leaves? According to some sources, lime zest might be ok. What do you think? I've been watching your channel and love the recipes. Many require, guess what? curry leaves.

      Good one. But can you cook in eco friendly way. For example you could have used lesser water for soaking.. it's anyways going to be drained out (read wasted). Let's make cooking eco sustainable given the global climate crisis.

    What's the difference between pongal and ven pongal?

      Pongal is a general name given to any dish that is made by boiling rice and lentils together. In thamizh "Pongal" means something that has boiled over nicely. Ven pongal is a specific type of Pongal. "Ven or Vellai" means white in thamizh. So ven pongal is white pongal. (The chef here has used more of lentil and also added turmeric so its yellow color. We use only half cup dal to one cup rice). In thamizh "sarkarai" means sugar or sweet. So sarkarai pongal is sweet dal and rice. 😁😁

      Jamie Hendrickson that’s not gonna be a substitute for curry leaves I guess! Cos curry leaves have a unique flavor in itself!

      Jamie if there is unavailablity of curry leaves then lime zest is substitute. Obviously flavour may differ bit. But yes it can be used as substitute. Actually curry leaves enhances the flavour of a dish (they don't have a particular sweet or sour taste but is a crucial spice). If available you can try for dried and packed curry leaves.

    The asafoetida should always go in the pressure cooker for Pongal, never in tadka oil. Otherwise accurate recipe. Ginger is usually not used, can be added.

      @@rvarghese0210 for 1 cup raw rice add half cup moong dal so total one 1/2 cup so water will be 4 1/2 cups 3 times water of (rice and dal)
