Nicely done....I use scotch bonnet pepper instead of pepper sauce, pound my fish with a mortar and pestle to get a more liberal spread of the fish through out the batter and I reserve some of the water from the boiling of the fish to add back to the batter instead of the salt and I use no eggs.

Some people do some people don’t. My mother flipped when she realise I do. I use it because it gives the fish cakes a fluffy texture even after a day or two it’s nice. I don’t like when fishcakes taste tough or too firm … don’t knock it until you try it at least once 😉

@@bajanfamilyabroad I usually just use baking powder to fluff them up a bit. But maybe next time I make them I'll try eggs instead.
