I love fish cakes. I make them a lot but I have never use potatoes in mine or ever see my bajan family using g potatoes in theirs I will try adding mash potatoes next time i make some. They look really yummy..💕🇬🇧

Ducana and Conkies are 2 different things but they are both put in leaves and steamed. Conkis are corn meal, pumpkin, potato, coconut, butter, sugar, spices, raisins if liked. Ducana is s. Potato, coconut, sugar, butter, spices, mix, put in leaves and steamed just like Conkies. Ducana is mostly made in the norther Caribbean, I used to live in the Leeward Islands and see my mother in law make it. I was born in Barbados and make Conkies, I wish people would check it out and stop saying that Ducana is Conkie. When cooked Conkie looks yellow, while Ducana looks the color of Bajan steam Pudding.

The whole point is not to boile out all the salt from the salt fish u need that taste maybe thats why it keep needing more seasonings. Maybe u need to add a bit more pepper because the water and other ingridents already cool it down
That don't always happen that I boil out all the salt, but It so happened I did on this occasion. more pepper would have been great but I was worry about the lady I was making them for, she is pregnant and I was afraid the pepper may have been too much for her. A few people were surprise at the adding of the sugar, I don't know where I got it from but I've been making it that way for a long time and everyone seem to love the flavor. I of course only add a small amount as to not give the fish cake a sweet taste. Everyone add their own spin to fishcakes, but as long as there crunchy and tasty, that's all that matters. It was more of a discovery for me, I had no idea in which direction I wanted my channel to go. Last year when the pandemic stared I realize there were hardly any Bajan dishes on TH-cam and so I wanted to change that.
