      He's one of the best culinary artists on TH-cam, but his recipes are often inaccessible. I like watching him, but I also like watching people who show recipes with easily-obtainable results. Often Bruno's desserts needs special molds or other equipment, expensive or hard-to-find ingredients, multiple days to prepare, and often with large amounts of fridge or freezer space.
      I've watched Bruno for years but have only tried one recipe. It came out OK. I've only seen Claire Saffitz for a couple years, but I've tried dozens of her recipes and they have all been fantastic.

    I baked the cake. If I hadn't put away a piece just for myself right from the start, then that would have been it for me. My guests fought each other to get another piece of cake. They asked where I got this great recipe from. I replied that I always ask Bruno when it comes to food, just like they ask Google when it comes to other things. Because of this excellent recipe, I was the king yesterday!

      I've made Bruno's Paris-Brest recipe 3 times and it works perfectly, although I had to bake the pâte-à-choux for a little longer. If not it will deflate. Still tastes good, but the presentation suffered a bit the first time lol. The praliné mousseline is the best thing I've tasted in my life.

(I'm an old lady🧑‍🦽with shaky hands👋who can't be trusted with a sharp knife🔪🩸 🩹 so on the rare occasion I bake a cake & have to split a layer, I do it by putting a circle of dental floss around the cake & pulling the ends together. Works perfectly.)

      Merci beaucoup!...La ganache ne fondra pas au contacte d'un alcool chaud.. Alors, on prend son temps - on ouvre la bouteille de Champagne et on déguste ce trésor de chocolat au coin de la cheminé 🔥..

    The cake was an absolute show stopper. Everyone was impressed by the looks of it.
    But we found it too rich for our liking - even though I made 16 slices instead of 12, some people could not finish their slice.
    Maybe it is because we are French, we are not used to this type of cake.

    Man that looks delicious. I might give this technique a shot over Christmas, but I’m thinking swap the ganache layers for eiskonfekt. Those treats a staple in my house for the holidays anyways so it could be worth a shot.

    How you can cut that cake so perfectly is beyond me! It’s not easy with normal cake … maybe different texture as it is almond egg mixture? Either way you are amazing thank you for sharing your masterpieces with us!
