Layer by layer is absolutely the best way. The last layer to eat , which is the top of the cake, is the grand prize, but entire cake is heaven on a plate. My grandmother used to make me for my birthday every year, but she past on about 15 years ago, and I havent had one since. I wish I could bake. Thanks for this video, as I can still taste it.

This looks like the "Smith Island Cake" which has been prepared for generations by the people on the eastern shore of Maryland on Smith Island. And it is the official state cake of Maryland. It has a very long Maryland tradition. Of course, many do not consider Maryland to be a "southern state" but if you get out the maps you'll see that Maryland is indeed south of the Mason-Dixon line.

Don't worry if you're good enough for the Southerner. They are in no way superior to you. I'm not an easterner, which both north and south are to me.

My step-mother's dad made these for Thanksgiving and Christmas. Except he would use a cast iron skillet to bake the layers. That was in Richmond County, right on the gnat line. Yours is exactly how I remember!
Honestly, I never really loved the chocolate cake, but he also made a red velvet little layer cake, which was OMG. It had a boiled cream cheese frosting that pretty much infused all the little layers. It was amazing, and it ruined red velvet cakes for me because I have never EVER tasted any other that even comes close!

I was wondering about the origin of the 18 layer cake. Because there is a similar desert in Indonesia but, they use a bread pan to make the layers. It is a gift left to them by the Dutch colonists.

It's all quite funny. This young lady has a story to go along with her recipe and video. I thought she was delightful in her presentation. It's seems many of the commenters on here need a history lesson or two maybe three. I suppose no one ever entertains the idea people interacted through out the country through friends and relatives from colonial days on. I could not imagine anyone ever sharing a recipe that could result in you being tarred and feathered! I am a proud Son of the South too. True southerners are nice people and overlook the shortcomings of others.
I do indeed wish that GNAT LINE was a true barrier to keep those aggravating little boogers way down in the deep south.
Chocolate and thus Chocolate Cake wasn't introduced to this country until after 1870. If you want a true southern colonial cake try a Caramel Cake, use the recipe from the Williamsburg Cookbook, you cake make in as many layers as you wish. Save me a piece.
