  • Here is the recipe video for our Instant Pot Taiwanese Beef Noodle Soup. This recipe brings me back to summers in Taiwan, slurping up delicious beef noodle soup. Our soup is flavorful and a little spicy with slices of tender beef shank. I love serving the soup with some Chinese noodles and blanched bok choy. Enjoy!

    As a Taiwanese-American - I have to say, you did this very well. It doesn't compare to Taiwan's but that's not the point, my home-made recipe from the instant pot is very similar to yours and let me tell you, here in Chicago during the cold days, it always hits the spot!!
    Watching this video, made me prep for making some tonight for dinner! :)

    Hi Katy, love your enthusiastic presentation and clear instruction. Big thumbs up for the pictorial of the ingredients list in your recipe page. It makes life so much easier for ppl who are not familiar with some ethnic ingredients. Wish most YT recipes can imitate that.

    1 1/2 pound beef shank
    4 cloves garlic
    1 inch ginger
    4 scallions
    1 yellow onion
    2 tomatoes
    1 tbsp tomato paste
    1 tbsp soybean paste (doubanjiang)
    1/2 tsp of dried chilis flakes
    (Add meat)
    1 tsp sugar
    1/3 cup soy sauce
    1/3 cup Shaoxing wine
    5 cups of water
    1 herb packet (cinnamon, fennel, ginger, cumin, clove)
    1 star anise

    great video, but the beef looks super dried out and black. Is that just a lighting thing? Also, whats the spice packet thing called if one would need to ask for it with its chinese name?

      Hey! I can see how it looks that way but it wasn't dry at all :). And the spice packet is called a Lu Bao

    Would it work to substitute stew beef instead of beef shank? It’s what I currently have in my fridge😅

      Yes! It would work just fine, we just recommended shank as our preferred cut!

    I really want to make this, i called around all the meat Market in my area but no one seems to carry the whole beef shank, they say they just have the bones. What other cut of meat can I use to substitute the whole beef shank?

      Any cut of beef for stews would work fine! It might be a bit tougher though

      I've had the best luck getting whole beef shank at the Asian grocery stores, but also have gotten beef shank sliced through the bone at a lot of local Mexican/Hispanic grocery stores. I just cut the meat off the bone. It's usually pretty inexpensive, and I like to roast the bones and marrow and throw them into the soup for extra flavor!

      I don't recall what they call it exactly, but it was labeled some kind of "shank." If you search for "cross cut beef shank", you'll see images. I've also seen it at chain grocery stores sold as "osso buco" cut. I believe it's cut from the cow's leg.
