It took a while, but I was finally was able to find all the ingredients for this soup and made it last night. Wow! This is amazing, and I would put it up against any soup in a restaurant. The flavors were so good and complex. My 13 yr. Old daughter is a huge Pho fan, and liked this so much, she had two bowls. Thanks for this recipe!

Finger meat? You mean belly 牛腩? Can only sometimes find it in small Asian grocery stores here... Regular grocery store don't have shank either 🥲. Beef Tendon works great too! More elastic too.
The boiling first part is called blanching, not that I recall anyone saying it. Might be an old wisdom best practice? Will help remove freezer smell I suppose.
For easy sauce, there is a Lee Kum Kee , Chu Hou sauce, but they don't sell it here either, I'll see if I can find that bean paste

Please ignore flo lol, the rice wine isn’t optional the aroma alone is worth adding it. That smell you get when you walk past an Asian take away and instantly get hungry that’s the rice wine cooking off.
Flo it looks delicious as always.
Just as a side note, the shops near us in the uk are sold out of air fryers and electric pressure cookers as electric prices are so high at the minute and they are so much more efficient than putting a gas or electric stove on.
