Instant Pot Taiwanese Beef Noodle Soup 牛肉面 (っ˘ڡ˘Σ) My favorite Instant Pot recipe so far

  • If you want to make something that will result in showers of compliments, this Taiwanese Beef Noodle Soup recipe is for you! Using an Instant Pot speeds up the cooking process, and I can personally attest that the end product tastes just as good as (or even better than) the beef noodle soup I’ve tried in Taipei.

    INGREDIENTS
    - 1 pound beef shank, cut into 2-inch chunks
    - 1 tablespoons oil
    - 1-inch piece of ginger, smashed
    - 3 cloves garlic, smashed
    - 2 scallions, cut into 2-inch segments
    - 1/2 onion, cut into wedges
    - 1 tomato, cut into wedges
    - 2 dried chilies, ripped in half
    - 1/2 tablespoon tomato paste
    - 1 tablespoons spicy bean paste (douban jiang)
    - 1 teaspoons sugar
    - 1/4 cup soy sauce
    - 1/4 cup Shaoxing wine
    - 2 star anise
    - 1 small Chinese cinnamon stick
    - 2 bay leaves
    - 1/2 tablespoon fennel seeds
    - 1/2 tablespoon cumin seeds
    - 1/2 teaspoon coriander seeds
    - 1 tablespoons Sichuan peppercorns
    - 1/8 teaspoon five spice powder
    - 1/8 teaspoon black pepper
    - Fresh white noodles
    - Bok choy for each serving
    - Scallions, finely chopped
    STEPS
    1. Bring pot of water to a boil. Boil beef for 1 minute, then drain and rinse
    2. Turn Instant Pot on to the sauté mode on the high setting
    3. Add oil to pot, then add ginger, garlic, scallions, sautéing after the addition of each ingredient for 30 seconds. Then add onion and sauté for 2 minutes
    4. Add tomatoes, dried chili, and meat, just stirring so that no ingredients stick to the bottom of the pot and burn.
    5. Add in douban jiang (bean paste), sugar, soy sauce, and Shaoxing wine and mixing after adding each ingredient to incorporate
    6. Add 4 cups water
    7. Add spices, and stir to evenly distribute
    8. Close the lid of the instant pot, and set the vent to “Sealing”
    9. Set the Instant Pot to cook at High Pressure (the “More” setting) for 45 minutes
    10. I found that natural pressure isn’t necessary, since the meat is still tender even without it. Be careful when unsealing the vent (I like to cover it with a towel)
    11. Scoop out the meat, and drain the rest of the soup to get rid of the spices
    12. Serve with bok choy and fresh white noodles
