    Love the lighting in your opening shot. Using different temperature lighting gives a cool "blue" background. Really like it man! Also those Elotes look killer!

    Armature BBQ guy here but imma gonna try this cuz I love these corn treats and I just got my first smoker. Oh and It's funny as hell In the Nacho Libre movie when the one guy uses Elote as a weapon and spears the dude in the eye like a lawn dart.

    I smoke the corn for an hour with half the husk on then finish on the grill for 10-15 minutes. Then I knife the corn off in to a big bowl.
    Add to the bowl of corn: some mayo, creme fraiche, a dollup of sour cream, a tiny bit of yellow mustard, finely grated cotija cheese, dash of cajun seasoning or taco seasoning/chili powder, fresh chopped cilantro, and lime juice. Stir to combine. Portion out and eat with a spoon. It's delicious!

    I live in Austin Texas and we have a place that makes these it’s a little cart out in front of fiesta grocery mart… It’s delicious my favorite is to put on mayonnaise, chili powder and Parmesan cheese. I’ve never made them tho.. is there a way to make them in a regular oven?

      Oh yea them little carts and the bomb and yes I would do the same way I did and just place them in a baking sheet in over and roll them ever so often at 275 degree and I bet you will be the same outcome

      Yes and for the most part queso fresco is what is normally used but one day I used parmaesan and was like hey look was I stumbled on and been doing like that since then

      Hotter is fine also as long as you soak em in water and keep rotating them should be good
